Look awesome, but have you ever tried a Low Carb version, maybe with coconut flour and allulose (or another Keto sweetener)?? I wonder if they would come out as crispy? I‘m presently on Carnivore, but thinking would love to make these for a once in a while treat at birthdays, company, party invitations.
Allulous is not approved in Canada and I don’t use alternate flours I’m on carnivore, but the family and neighbors aren’t and these were treats. I was making for everyone else.

The key to keeping them crisp is keeping them dry. The freezer would make them soggy best to put them in a cookie tin

Absolutely, the butter makes them crisp
