HAPPY NEW YEAR my sweet Friends! Thank you so much for being here to support me on my new channel! In Today's Video, I will show you how to transition from Christmas to winter decor in your home. I will share some tips and ideas on how to create a cozy, neutral vibe for the cold winter season. We're going to make a healthy version of Cinnamon Coffee Cake! In this Video:
Cinnamon Coffee Cake:
1 1/2 cups of all purpose gluten-free flour, 1/2 cup of coconut flour (can substitute almond flour)
2 tablespoons of brown sugar or coconut sugar, 1 1/2 teaspoons of baking soda, 2 teaspoons of ground cinnamon, divided, a quarter teaspoon of sea salt, 3 cups of reduced fat cottage cheese, 8 large egg whites, approximately 1 cup, 2 teaspoons of pure vanilla extract, 1 teaspoon of liquid Stevia, 1 tablespoon of unsweetened cocoa powder. Topping: a quarter cup of dried rolled oats, 3 tablespoons of chopped unsalted pecans, 2 tablespoons of brown sugar (or coconut sugar), 2 tablespoons of unsalted organic butter, 1 teaspoon of ground cinnamon.
Preheat oven to 350. Lightly coated 8x8 inch baking dish. At all the flour and sugar, and baking soda and cinnamon and salt into a medium mixing bowl. Then add cottage cheese, egg whites extract, Stevia, if desired, and put into a blender, blend until smooth. Pour half of the mixture into the baking dish use a spatula to spread evenly into corners. Add cocoa powder, and 1 teaspoon of cinnamon with a sifter over top. Spoon the rest of the batter on top. To make the topping add oats, pecans, brown sugar, butter, and cinnamon to a small mixing bowl. Stir to combine and sprinkle evenly over the batter. Bake to 40 to 45 minute. Let cool for five minutes. And refrigerate leftover coffee cake in an airtight container for up to four days.

I am always amazed at how many people say they hate the dark , gray days of winter. I am totally opposite. I love them!!! Gray, cozy, cloudy or rainy days make me so happy. I am retired now , but when I was working , I would walk into the office and people would say "well, I hope you're happy!" on rainy days. And yes I was. Soups, stew, biscuits, fires, candles, leggings ,sweaters and fluffy slippers!!!! Yes, please!!!! I feel like I am in a little nest, all cozy and warm. Having a tray on the coffee table makes everything feel collected and not chaotic. I also love a magnifying glass ( mine is black and white check and brass. It's just such a different item that feels unique. A candle and my decor books are always out and change seasonally. I save so many of my pretty empty candle vessels. I just buy little poured jar candles at the Dollar Tree and set them inside, so I can still enjoy them. And you don't have to clean out wax, just throw out the little jar. Your home looks perfect for the winter days ahead.

I just found your channel. I really want to thank you for the pep talk. While my children were growing I had had a group of friend that were more like family to my husband and myself. This time of year is a gift to remind us to slow down and take it all in. All seasons before and after this season finds us hustling and bustling with Holidays, Vacations etc. We are to embrace and rest during this season and I really do enjoy it. Hi Karen your house looks beautiful. I love your style. We took down our Christmas on January 1st. I always get sad when it’s all over and the house seems bare. I feel down. I think this is common. I like to go on a nice walk in the afternoons, to clear my head and take in some air. It relaxes me. Life isn’t all roses, it’s ups , downs and everything in between.
