just discovered Gozlemen in a flea market in Istanbul - this is amazing. they added some baked crushed potatoes to it! Turkish food is one of the most diverse in the world. thank you for sharing the recipe :)
We made these tonight and they were a huge hit! My technique needs a little work but my wife said it was worth the mess I made any time I wish to make these.

I make Gözleme myself. My personal favourite is with spinach & sheep cheese so i never make it any other way 😋😋😋 I also love yaprak dolma buuuuut because it's so much work I rarely make it
Oh you have to The spinach & feta cheese is my favourite I personally cook the spinach with onions, garlic, some nutmeg & some chilli The feta I mix with some parsley

This is like the Indian parantha. But we use whole wheat flour instead and filling is usually of onion and potatoes, grated cauliflower or cottage cheese etc.
Gözleme can be done with different fillings, like a potato filling or a meat filling My favourite is the spinach & sheep cheese filling I can't get enough of it 😋😋😋

The reason I raised this point is because ' gözleme' is pronounced as 'ghozleme' rather than ' 'ghuzleme'. Göz means eye. Gözleme means observed and weighed by eye_ instead of by scale... All purpose flour?
All-purpose flour is the choice of flour for the traditional gözleme in Turkey, though you can experiment with whole wheat flour too.
