  • I purchased a manual watermaker as a backup called QuenchSea (www.quenchsea....). In this video, I also finally get to fix something that has been driving us nuts for the last year. The companionway steps kept vibrating open - no more! Finally, Ava and I take a stab at making delicious Pastel de Nata. Didn't work our 100% as we had hoped ...

    I'm amazed how this channel evolves so nicely, with Ava contributing more and more. The episodes feel somewhat less scripted and planned - take that as a complement. But it does add to the cozy feeling of watching you two have fun making these videos. So keep up the natural spirit, and have a happy New Year. Cheers.

    "Cooking with Ava" is so enjoyable to watch. The "mistakes" keep it very human - not unlike watching my wife cook. "I'm trying something new" is always the start of her kitchen adventures. I'm the technical one (although she has the engineering degree vs my science degree). Together, life is an adventure worth living.

      On a boat we find that cooking often requires a dollop of ingenuity since many specified ingredients are often not available so substitution is required. The ability to go back to the store to buy more is a rare luxury. We carry a lot of dried and powdered items and have had to experiment in how to use them in other's recipes instead of fresh as specified. Not all experiments are successful but we often eat the disasters anyhow.

    Companionway looks great, but, Ava, you're the star of the show! AC: normally the heat exchanger's live below the waterline, I'll be interested in your unit, if it arrives in time. Oh, and the guy in the market spoke wonderful English!

    Glad to see that Ava was not disheartened by the bad egg experience. However, what if the bad egg had been the last egg she was cracking into that large bowl? Crack eggs into a smaller receptacle before transferring into a large bowl. That way, if one turns out to be bad it can be thrown out without wasting all the others.

      We try to flip all of our eggs every day or two, turning them over in their cartons so the yolk doesn't settle. We don't refrigerate them even in the US and have had no major problems with them. We do crack eggs into a separate bowl -especially after they begin to be a little older. USA eggs that have been washed and refrigerated do not last nearly as long if kept this way compared to eggs in other countries where the natural outer coating has not been washed off.
      If they are allowed to warm to room temperature and air dried so they are not covered in condensation inside their crates for a long time they do much better. We usually will open the crates when we get back to the boat and let them warm up in the sun outside in the cockpit until they warm up to room temp before bringing them in. Watch out for bird predators doing that though, some love to swoop in and make a mess trying to break and eat them.

      ​@@SailLife in the UK, there used to be a 70s show with Bruce Forsyth called the Generation Game... An expert would show them how to make or do something, and then the players had to 'try' to do it, in a set time. some of them were hilarious.

    A few notes, I have seen commercial truck windshield wiper motors used to run US Army surplus manual water makers, driving the pump arm instead of you.
    Second, simple syrup. 2 parts sugar, one of water and just bring to a simmer. Done. Great for sweetening cold drinks as well.
    Third, crack fresh eggs in a separate bowl one at a time. One bad egg isn’t a problem when it’s the first egg when it’s the sixth....

    Hi depending on the data on the NAS consider making it part of your Emergency Plan and place it in a pelican case you can take with something added to make it float/signal unit. Not a nice thought but you will be glad you have it especially if you place all your important stuff on there. Where you are going there is no calling 911 like the Americans would say..We don't have 911 :D
    PS Don't stir the sugar while cooking it causes it to crystallize just boil.

    Knowing you Mads, this is most likely not an issue, but I noticed that the top edge (all edges??) of the removable companionway step unit was "raw??" (well unpainted) plywood. Somehow I am certain that it is sealed against all of the pressure possible times a factor of at least three, but giving a a coat of nice white epoxy may make is look more SPIFFY.

      yes, Ava is lovely, and Mads has a unique way of describing things that are very funny. Actually those little cakey things looked yummy and if being a tad overly buttery is the only problem, then the next batch are sure to be perfect!!! Most old fashioned cooks, don't look at cooking as a science. It's just something, which after trial and error improves.

    Could you replace the bottom latches with a close fitting "peg" and divot for it to fit in? As you can create leverage with the new latches, as long as this joint is tight, you will just need to lift it up and out and still get a tight fit.
    As the bottom of the surfaces can touch, it might even reduce flex even more as there will be extra support down the bottom

      I had the same thought, perhaps with a well spaced pair of pegs for extra stability, or a wide single tenon. It would require some thought to ensure no blind pockets were created to trap debris...

    Hi , have a great new year and the cooking was like a West , tart with some thickening to give it strength . Yes it is harder than one thinks making those custard tarts as our home kitchen has seen the fall out after giving it a go , really glad our local LIDIL,s are cooking them now .     Really nice to see a bit of DIY. You are so exceptional with your attention to detail and your results are superlative. As a former professional baker, I enjoyed the tart making. If you find the fat running out of the pastry, increase your oven temperature just a tiny bit - 10 degrees F should do it. This way the fat bakes into the pastry and makes for a tender, melt in the mouth texture. Cheers.

    Ava has such a sarcastic sense of humor which would go over well with an Aussie or Brit, a Danish computer programmer, not so much, I can see her influence slowly rubbing off on Mads though, but most of the time I think Mads struggles with her humor.

    I lived in Lisbon for 15 months. Those mosaic style pavements can get mortally slippery in the rain! As for pasteis de nata, I took one look at making them, and decided just to buy them instead...

    In the Azores, during festivals we take local flowers (that come in a ton of colors) and lay it down in the middle of street in designs. After awhile with people walking on it will release a very pleasing smell in the air. I live in the states in a heavily Portuguese influence area and the festivals happen here not so much the flowers but all the same, those custards are found in the Portuguese bakeries also sweet rice yummmm.

    Just so you know, I am very happy you did not cross over to 60Hz video yet. I can do 1080p but so many channels are going to 60Hz lately so I am stuck with 480p. Yes, I should just buy new equipment but I hate trashing perfectly fine computers.

    Pate Brisee in a nutshell. Have everything chilled, bowl flour, butter, ice water. Cut butter into cubes the size of your thumbnail. Measure flour by sifting into cup, a packed cup of flour will hold twice as much flour. Dump flour into chilled bowl, dump cubed butter into bowl, stir with fingers to coat and separate butter cubes. Using your hands find each butter cubes and smush it while under the flour, this should only take a minute or two, leaving a crumbly looking mixture. Still by hand add ice water a spoon at a time, sprinkled on the water vs making a puddle, mix in adding just enough water to allow the dough to hold together. Dump onto plastic wrap, smoosh into a ball, wrap in plastic, set in fridge to rest. The goal is to do this without the butter getting soft and it is ruined if the butter melts. When rolled out the pieces of butter trapped in the dough make a delightfully flakey crust. Don't think that the more you work the dough the better, it's not, do the steps, it should not take more than 2 - 3 minutes from start to finish.

    I joined this journey way back when Mads first acquired this boat and was concerned that after enjoying the lengthy renovation that the actual sailing content may have lost my interest. I neednt have worried. Its you pair that are holding my interest. Thanks Guys and Happy Sailing in 2023.

    It has been an abnormal egg year for us as well, we had two double yolks making our eggs Benedict on Christmas. Way to power through guys. Pretty dang spiffy!

    I always check my eggs in one of those 200g Nutella cups. Rarely do i find a bad one, but it's worth the effort. Two cups of Nutella are also good at separating the egg. You prop one cup against the other's side and tilt the egg until the white fall out, the yolk is held by the side of the cup and because the lips are much more rounded than regular cups, they don't break. Oh and there's a few cups out there that come with various measurements (new year's special editions). Some have ounces, some have grams, some have ml measurements.

    The cooking lesson was just too much fun !! Hope Ava decides to do more episodes in the kitchen (galley), she is a wonderful tour guide also. The idea that we learn sumptin in each video whether it is boat repairs, maintenance, building dodads, and now cooking on a sailboat. Love you two !!

    Great baking, far better than the TV types. After all that intense pastry and egg work at least a week of fog time is necessary, perhaps add some pre chill days for the air con to arrive.

    Ava, I clean before baking too. 😂 Pastry dough is so finicky. Looks like it turned out great! Mads, I like your attention to redundancy. Ava keeps you fed and you keep her safe. What a team!

    I just love this channel, Mads has a unique disposition that draws me rite in and the relationship between the two of them is so genuine, it's really hard to watch an episode without feeling happy for them. I wish I had Mads carpentry and PC skills, everything he touches turns out so beautiful, I would love to buy that boat if they ever stop sailing, it just gets nicer with every episode. I love this content !

      Yes it would a brilliant boat to buy. It is probably the most high tech boat on the seas right now, for its size. I fyou were to buy it, you would require a 10 day systems's course just to take advantage of it's technology!
