- Cook this to impress your romantic date or even for your kids as its sure to impress. With this rich tasty easy to make spaghetti that's a crowd favourite every time I cook it there's never left overs.
Cooking time 1 hour
Serving size 4-6
Ingredients
500g beef mince
1 brown onion
3 garlic cloves
140g tomato paste
1 tin chopped tomatoes
500g spaghetti
500ml red wine
fresh basil
Method
Dice brown onion and garlic then on medium heat frypan soften them in some olive oil. When aromatic add beef mince and cook until browned.
Add the tomato paste and fry for 2 minutes to help reduce the bitterness.
Add can of chopped tomatoes , 5 chopped basil leaves and 500ml of red wine. Reduce heat and allow to simmer for 30 minutes until sauce has significantly reduced to a paste.
Boil a large pot of water and season with flaky salt. When bubbling add pasta and cook 5-10 minutes until al dente (slightly firm). Rinse cooked pasta in cold water and drizzle with extra virgin olive oil. plate spaghetti and drizzle tomato sauce over the top and garnish with fresh basil.
Notes
Cooking the wine will remove most of the alcohol content but If you do not drink alcohol or cooking this for kids I suggest using a non alcoholic red wine substitute.
The aim for the pasta should be "al dente" this means it has a slight bit of firmness but not to be mistaken for undercooked. The method I use is to run a single strand under cold water if it holds its shape then it requires further cooking. When cooked properly it should be loose when ran under cold water and should have a slight resistance when pinched between fingers.
