I had a great harvest first time growing butternut this year too. I am going to can mine, now I feel much better about the peeling process, I wasn't sure where to start. I am also going to try to roast the seeds I have read they are good. Thanks.
I'm looking forward to that caramelized butternut squash soup recipe. Just the name reminded me of a caramelized Vidalia onion soup that I had at a restaurant in Atlanta. It was amazing.
I do mine the same way. I might add, that I place my squash on a paper towel when peeling it, as it gives you a better base and prevents slipping. I also use a wooden cutting board I keep just for vegetables and use it for the same reason. Squash is slippery once it's peeled.
I'm looking for an easier way because it had somehow hurt my shoulder and wasn't sure if I was up to so much chopping. my shoulder is feeling better and this method was pretty easy on it, especially with sharp enough, large knives
you are so precise Kevin, "stem end, blossom end, cylindrical" - I would have said "the fat end and the skinny end"!!!. I get squash seeds germinating out of my compost pile and producing fruit. I suppose you will save some seeds for next year's planting? I am looking forward to the
Hi Marta - I think you'll find that the Y peeler works brilliantly not only on hard-skinned squash, but on carrots, potatoes, sweet potatoes, and more. I threw out my puny traditional peeler!
Hi Vilma - My butternut squash is the old 'Waltham' variety. I bought the seed from a local garden center -- the same should be available from any seed seller. Waltham has a great taste!
Is it only me? My fingers feel strange the whole day after handing butternut squash, as if my fingerprints have been lasered. I'm looking forward the caramelized soup recipe, sounds worth the work and discomfort.
