Can I make it without gelatine and use the Swiss meringue buttercream to make a dam to prevent it from oozing out? Thank you. Does the gelatine give it a jelly texture?

Wonderful. Im planning to bake this as a surprise for my husbands birthday soon. But i got a question with the icing, can I disregard the eggwhites from the Icing? Im not really sure I can buy a pasteurized eggwhite here n our area. And besides Im afraid using it , got a toddler who also love to munch this cute cake.
Dang love crumb and top coatings. I am inept lol. I always press too hard which pushes the cake - almost off the turntable hahaha. 🤗💐. And I can’t get a smooth final icing. And just damnnn at the image and your cutting skills. 🤯
Hi Dona! All those problems are easily fixed! I too get cakes slipping when I try to do the crumb coat. If you find you push too hard, then once you have stuck the first layer down with buttercream, FREEZE for 10 minutes so it's solidifies and sticks well, then continue layering and you should be good to go. Also, always chill between the crumb coat and top coat. The easiest way to get a smooth final coat is to make sure your buttercream is soft. The softer the better...it will smooth without too much effort. You can also run a hot smoother over it when you are done just to be sure. Good luck! :-)

your cake is beautiful and looks incredibly delicious, as always!!! but how come you stopped providing measurements in grams for each ingredient :( ? I really liked and appreciated the fact that you provided gram measurements before.
dub doobeedoo sometimes I do and sometimes I don’t. I like to show that succees in baking can be achieved either way. This is a very forgiving recipe so there doesn’t need to be too much precision.

Loooly Loooly it will work fine in 4 inch pans. Increase cooking time 5-10 minutes as the cakes will be taller.

You can just use regular buttercream if you like.

No, it's not safe to use raw fresh egg whites. The reason this method works and is safe is because the carton egg whites are pasteurized.

You can easily pasturize egg whites at home. Many tutorial videos how to do it if can't buy already pasteurized eggs at market. Just a note for you.
