Ingredients
1/4 cup olive oil
12 oz (340g) boneless lamb, chicken, or beef
1 large onion, finely chopped
5-6 garlic cloves, grated
28 oz (800g) crushed tomatoes
2 tablespoons tomato paste
2 ribs celery with leaves, finely chopped
15 oz (425g) canned cooked chickpeas, rinsed and drained
1 cup uncooked green lentils, soaked and rinsed
1/4 cup rice or vermicelli noodles
8 cups chicken broth or water
1 tablespoon all-purpose flour
lemon wedges
1 cup finely chopped fresh parsley or cilantro leaves
The Spices:
2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground dried ginger
crushed red pepper flakes, to taste
Instructions
Cut the lamb into about 1/2-inch pieces, around the same size of the chickpeas. Add teh lamb to a large dutch oven pot along with the olive oil.
Cook the lamb over medium heat until browned. About 5-8 minutes.
Add the onion and a pinch of salt. Cook until the onion is soft. About 7-8 minutes over medium heat.
Add the garlic and warm through for a few seconds until fragrant.
Add the tomato paste and the spices and cook for about a minute taking care not to burn the spices.
Add the celery, broth, tomatoes, chickpeas, and lentils and bring to a boil. Reduce the heat to medium-low and cook for 45 minutes or until the chickpeas and meat is soft and tender.
Combine the flour with 3-4 tablespoons of water and mix together until smooth. Add to the soup along with the vermicelli noodles. Mix together and add more liquid if needed. Also taste and adjust the seasoning if needed. Cook for 10-15 minutes or until the noodles are cooked and the soup has thickened.
The soup should be thick but at a pourable constistency.
Top with the cilantro and serve with lemon wedges. Kali Orexi!
Notes
Make it vegan: Omit the lamb and follow the recipe.
Gluten-free: Omit the flour and vermicelli and add rice instead.
Instant Pot: Set the Instant Pot to saute and add the olive oil and lamb. Cook until golden. Add the onion and saute until golden. Add the garlic, tomato paste and spices and toast until fragrant. Add all of the remaining ingredients except for the flour, cilantro, and vermicelli. Set the intsant Pot to High Pressure and seal the vent. Pressure cook for 20 minutes. Allow the pressure to naturally release for 10 minutes. Carefully remove the lid and set the Instant Pot to the Saute Setting. Add the flour and water mixture, the vermicelli, and the cilantro. Taste and adjust the seasoning if needed and add more broth also if needed. Cook until the vermicelli is cooked and the soup has thickened.

Great recipe! I showed it to my mom and she said it’s the authentic recipe. She also said that in order to enhance the flavor, add half a teaspoon of ghee after you add the flour.
Finally, a cooking channel that doesn't add music through the whole video. I just subbed!
Just made this and WOW! It’s amazing!!!!!! So so good!
Wow, I'm gonna love this!
I love all the spices! 😋
Dimitra, I made this tonight and WOW. Just WOW! No words to describe it except: EXCEPTIONAL. Thx so much
Looks nice and healthy. This is almost identical to a recipe I got from a native Moroccan a while back. The only addition was he mixed in a raw egg at the end (tempered addition so it didn't form discrete lumps) which thickens up the soup a little and makes it more unctuous.
Apparently, traditionally it's often used to break the fast of Ramadan each day. In that respect it's quite a clever choice of ingredients since it has a little bit of everything and fills you up quickly.
We
This soup is everything 😋

I've only had/prepared Harira vegan/vegetarian. I do have about 12 ounces of lamb cubes in the freezer so will try it with the meat. Harira is so flavorful and filling...a staple in my house. Thanks for the recipe

Lovely! I am so happy to see you experimenting with foods from different cultures but yet, so similar to the Balkan/Greek style. I will definitely try this one!

I have eaten it my Moroccan friend made it it was so …tasty
Delicious and very affordable! I made a huge batch with just 300g of beef, and it turned out so great. Dimitra, your recipes are always so fool-proof, I love it. Also, flavor-wise it reminded me of the georgian kharcho soup, if someone's looking for a similar but not identical dish to this one. Thanks!
Bless you 🙏❤️
Thank you❤
Nice
Thank you so much 🙏🙏🙏
You're most welcome!
Yummy…❤️❤️
Well done
Ummm delicious 😊
Yes!! So delicious!! Enjoy :)
Looks amazing..just wanted to know if I have harira ready made powder..how to do this recipe
Hi Dimitra, love all your recipes, love your harira, though never eaten that way, traditionally it has more liquid. The ratio liquid/meat and veggies is off. We eat harira during ramadan but also whenever we crave for it, especially during winter. Having said that I will try it your way with some nice crunchy bread like eating a stew or something. So allways a 👍 for you!
I'd make it without meat. Looks good!
I agree that this would be good without meat, also
Don’t do that please 😢
You can do it with meat we do with meat sometime just for other flavor 🇲🇦
🇲🇦🇲🇦🇲🇦🇲🇦🇲🇦🇲🇦 you did good. 😊Thank you for sharing 😊
it is amazing to see one of our famous moroccan dishes presenting by well known channels youtubers; that's an honorable thing ; but as a moroccan cook if you allow me to post my remarks I can say that garlic cinnamon cumin are not among the real harira's ingredient . Anyway you did a great job ; greetings from marrakech

Which lentils not mentioned
While adding the lentils, you mentioned "fresh chickpeas" did you mean to say dried and rehydrated chickpeas? I've never seen fresh chickpeas in stores.
I meant to say canned cooked chickpeas.. sorry about that :)
This soup serve how many people?4?

egg in the way you got harira soup from that native moroccan is optional thanks
By all means eat the korianderstalks!! Chop them up and throw 'm in, I do not understand why so many people throw them in the bin. Other than that...lovely soup!
You know I'm replacing cilantro with parsley!!!

Harira isn't specifically moroccan!
It is it's historical recipe stop acting like Turkish people when they see any greek cooking their heritage cuisine 🤢🤢
Yes it is, since when you put lentils in your soup, its 10000000000000000% moroccan
Poor Lamb, feel sorry for lamb.
🐑 I'm with you. I'm 67 and have never had any desire to eat lamb.
@@jodybogdanovich4333 How can you hurt such lovable creature. I do not understand.
You don't need to use lamb, use mutton, fyi.
Harira is algerian not moroccan.
hahaha in your dreams hahahah, this is 1000000% moroccan soup, since when you put lentils in your soup
Looks good and probably tastes good but this is not authentic Moroccan harira. It’s a Moroccan inspired soup.
No I don't like
