I'm watching a whole bunch of your videos, and I have to say they're all delightful! I really want to try some of your recipes this summer, especially this one and the rose petal jam! Seems like great gifts as well. Thank you for the videos!
Thank you so much! I've only started making these videos recently and I'm so excited to hear someone enjoys them. Absolutely made my day. :) The rose petal jam tastes AMAZING! And the scent! I think it'd make a fantastic gift.
To be honest I can't say since in my house we finish the bottle within few weeks. :D From what I've read online most people say two months. If you want to make a big batch that'll keep longer, it'll need to be bottled hot. I'll make a video on that in about two weeks since the elderflowers are about to go into bloom. Thanks so much for nice comment! It means so much to be.
You could! But I found that pressing them (as oppose to pouring) flushes more pollen into the syrup, which makes it slightly cloudy. But elderflower pollen is healthy I believe, so you have to decide if you prefer pretty, clear syrup or a little clouding in return for more pollen :)

Could i also press on the flowers? Like, could i squeeze them to make sure that they're completely drained?
