A traditional (though mostly regional) dish for Gründonnerstag is Grüne Soße/Sauce. A Schmand/saure Sahne based cold sauce with lots of different herbs in it, served with hard-boiled eggs (actually in my Grandma's recipe the eggs were cut in little pieces and in the sauce already, but you can also just half/quarter the eggs and put them on the plate like that) and (of course) potatoes. It's very yummy.
I definitely know the Osterlamm, my paternal Grandma used to bake these for my brother and me when we were younger (cake, not bread; and also not filled. I grew up in northern Hesse).
Also: I dunno if kids still do that, but when we were young (late 80s, early 90s) we used to collect moss (from the grass) in our garden and with it build Osternester ourselves. We'd put them somewhere in the garden and then check them to see if the Osterhase had left something in them.
Hello Naruya, the part with the green sauce is pretty new to me and I never heard that before. Are there recepies for it?
It's also a tradition for families to go on a easter walk (Osterspaziergang) where the kids will find eggs that have been hidden previously by the -parents- easter bunny.

Well Osterspaziergang is also a Part of Faust written by J.W. Goethe and quite a lot kids need to learn the poem in school. Just for a bit more Eggjucation.

well here in NRW they're selling Cake Easter Lamps in bakeries, but those are not filled. None of them as far as I can remember including those my granny did and Mom and Sister are doing.

An "Osterlamm" is definitly a thing here in the south. Every easter we get the cake version, but usually without the creamy filling :D

The word "Grün" in "Gründonnerstag" ist coming from the former German word "greinen" what means "to whine", "to cry" or "to weep", so I don't know what the correct translation is.

The Osterräderlauf is actually very specific to the town of Lügde. I don't believe any other part of Germany does it.

I only no Osterlamm as real Lamm, because they are born in spring around easter time. I have never seen the baked ones before. Well, we also don't roll that burning easter wheels down the hill, as we have no hills 😄
By 'no' you mean 'know', right? Just want to be sure, that you've learned it correctly, as I saw you making the same mistake again in a later comment.

Sadly, there is no english version of the german entry of Gründonnerstag in the Wikipedia. And it´s well hard to explain.
Some say it comes from the color green as in the color of the priest robes, others believe it comes from the middle high german (spoken in the medieval times) term grînen for griefing. And many theories more... :-)
Actually, the priests wear a purple Stola during lenten season. Thus they are doing so on Gründonnnerstag. Only after the Osternacht the colors change to green.
I also like to point out, that the "Ostermette" is held on the Holy Saturday, not on Easter sunday.

yep, wiki states the color thing. But prior 16th century the stola was green. They changed the whole lithurgian color scheme around that time.

I forgot to mention; in the past also other animals than the bunny brought the easter eggs, typically the fox or the...Storch... don't no the english word, that big black and white bird that also brings babys.
The bunny had the better promotion, i think, and the others are out of buisnness

I bet the easter-wheel was invented by some bitter people uphill...
What's the difference between rabbits and hares?
+Brotchip 120 Found this information - hares are generally larger and have longer ears and back legs. Also, the fur of hares changes seasonally, whereas rabbit fur retains its colour for the year.
