Please please PLEASE focus on some stories or people and creatures from Irish mythology. There isn’t a clear plot for the history but there’s are numerous well known stories about individuals and there are monsters and such too.

There's probably more, and there is at least one of them where there might be some overlap with other mythologies. Tolkien borrowed heavily from mythology, and it's quite possible he was inspired by Norse mythology when he invented Shadowfax as in Norse Mythology we have names like Skinfaxi, Hrímfaxi and Gullfaxi, it still just a fantasy novel, written less than 80 years ago!

He was challenged to create the most beautiful animal the world had ever seen, and after several attempts (mostly sea creatures), he eventually created horses, which is why (even though he's the god of the sea) Neptune is considered the patron god of horse racing.
