Wholemeal penne with tomato, ricotta and chives is a delicious vegetarian first course, perfect for lunch or dinner. This tasty and creamy pasta will please the whole family. I used wholemeal penne but you can choose any other type of pasta you prefer. All you need are a few simple ingredients, a few minutes of time and a delicious and nutritious dish is ready!
Ingredients:
- 250 g (9 oz) of pasta
- 2 shallots or 1 onion
- 15-17 cherry tomatoes
- 2 tablespoons of ricotta
- 1 tablespoon of tomato paste
- Pecorino or other mature cheese
- Chives
- Salt, pepper, chili pepper
- Olive oil
RECIPE N2
Rigatoni with spinach pesto and cherry tomatoes is an incredibly delicious and easy to make first course. This is a great lunch or dinner option for the whole family! Just a few simple ingredients are enough to prepare it but the result is amazing!

- Parmesan
