Well done! I miss my Mothers sweet green tomato pickles. She would call me into the kitchen & say SIS go out in the garden & pick ALL the Green tomatoes & tomorrow you & I will can them. What a great day it was. With the snow a foot deep in Feb. I would go down in the fruit cellar & bring up a jar for supper. If you can some let me know I will buy a pint from you, better yet a QUART.

Wow... Just a preference or distaste for eggs? Or just not tried it, yet? We put our beets (juice and all) into a bowl with the hardboiled (peeled) eggs, put a lid on them, throw them in the fridge overnight, and enjoy them the next day... Do tell.. I am curious now...
My Granny’s sweet pickle recipe calls for a thick slice of ginger added to the slice bag - I am intrigued that you use it in your beets. Sounds wonderful

So I’m going to plant as many beets as possible in the center of the beds and as the plants die off hopefully the beets will come in big enough 😊

You wont be disappointed, I am sure... I thought the ginger thing was a little off the wall too, until we tried it... Man it is good... And if you happen to be a fan of rosemary, a small sprig doesn't hurt them either... I am just not a huge fan of rosemary, so we leave it out... You'll like the ginger though... Ah... The gumbo sounds good ! I have a "Cajun Soup" (for lack of a better name) I put up that has andouille sausage and chicken (celery, onions, peppers, tomatoes, and okra / etc)... Louisiana) I grew okra & put some up every year. Up here in Amarillo, no okra 😖 but I started me a few plants from seed & sure hope they make at least a little for me to put up for some Gumbo!! They are in containers, since I'm just renting a place right now.
I hear ya... We really like okra... They are some heavy feeders, especially in a container with limited soil, so I'd keep some feed to them once a week or so (they like that water soluble tomato food)... Good luck !

They were, but I have a some question as to that when it comes to a *pickle* because the acidity of the vinegar (especially at a 2 to 1 with water). My VERY PERSONAL OPINION is that it is likely unnecessary. I go back and forth on it so much, that is likely why I didn't even say anything. Guidelines say do it, so we do it, and recommend doing it. Not to say I agree though.

Yeah, we like to leave some stem and the root so all the color does not boil out in the skinning process... We have a rule here... I have done 1 jar of refrigerator beets once lol my mom really enjoyed them and looks like you guys used the same spices except the ginger but I bet that taste really good and I've grown my own ginger this year so that would be a great use for it. The beets are canned for long term storage. To make beet pickled eggs, you would simple dump a can of beets (juice and all) into a bowl with the hard boiled eggs, cover, and refrigerate for 24 hours... And yes, it changes the flavor of the eggs... You can taste the beet in the white of the egg... Beyond 24 hrs, the beet juice will soak into the yolk, which tastes fine, but most people find it unsightly... Hope that helps ! When you have a partially full jar, try putting onion slices in there to pickle with the beets! Yuuuum! You might like them as much as my family does. Enjoy!!
We do add red onions to some of them... Others we leave plain because we like to stir in hardboiled eggs and let it sit over night... The eggs turn pink and are really good with the beets.... But I do like the onions in it, I am glad to hear we are not alone...

I have pickled before but I am wondering do you have a set amount of time you would like them to stay canned before opening them? When I make my pickled squash relish the older the better but found that at 3 months it was as pickled about perfect. Did you use the whole gallon of vinegar in your mix? Have you saved your pickled beet liquid, after beets are eaten, and used it to make pickled hard boiled eggs? I just save the liquid in the fridge until I have enough for a quart of eggs. To my taster, they are really good. My pickled beet recipe is real close to yours. Love your videos.

I was wondering why you made so much brine. Are you going to use it for other veggies? How do you keep it? I'm to try this recipe. The last time canned pickled beets, which was also my first time, the flavor was great but they were too soft. I figured that it was because I cooked the beets thoroughly, as that recipe stated. I'm going to try your way this time.
We are so going to try this recipe. I have a question when you said 1 tbsp cloves 1 tbsp allspice and the cinnamon sticks was that the amount for a single batch or was that for the double?
Really, I would do it about the same for either... I just leave it in to taste... You will know you got it right when you pucker, but you like it... ahahahaha
Ya know, I would hate to answer that, not knowing for sure... The beet goes in the jar and nothing comes out, so the only benefit might be in the vinegar... You really do not want to can them plain though, as the water will literally "water" them down and they turn a rather unsightly pink....
We do in some, sometimes... The problem is that we like to make beets and eggs, so then we just stand around eating the onions (we use red onions)... LOL Which is not altogether a bad thing... ahahaha
They turned out awesome ! We are really excited... And we still have a box to go too ! Pickled beets and eggs are so awesome ! One of my favorites ! And we have the chickens to provide the eggs... So we are set !

Just a guess... 2 tbs cinnamon, 1 tbs ground cloves, 1 tbs ground allspice.... That will get you close anyway...

I have never canned spiced pickled beets. I've only made the brine without the spices. I'm thinking about trying this. 😊

I was wondering why you made so much brine. Are you going to use it for other veggies? How do you keep it? I'm to try this recipe. The last time canned pickled beets, which was also my first time, the flavor was great but they were too soft. I figured that it was because I cooked the beets thoroughly, as that recipe stated. I'm going to try your way this time.
We did not end up with that much leftover brine... It is hard to guesstimate just how much you will need...
We are so going to try this recipe. I have a question when you said 1 tbsp cloves 1 tbsp allspice and the cinnamon sticks was that the amount for a single batch or was that for the double?
Really, I would do it about the same for either... I just leave it in to taste... You will know you got it right when you pucker, but you like it... ahahahaha
As a young girl slipping skins off the beets was my job during my Mom’s canning time.

We do... It is rather hard to peel, so its a rather crude process...
Are picked beets just as healthy as unpickled?
Ya know, I would hate to answer that, not knowing for sure... The beet goes in the jar and nothing comes out, so the only benefit might be in the vinegar... You really do not want to can them plain though, as the water will literally "water" them down and they turn a rather unsightly pink....

We do in some, sometimes... The problem is that we like to make beets and eggs, so then we just stand around eating the onions (we use red onions)... LOL Which is not altogether a bad thing... ahahaha
