I found this video very helpful in understanding the process of canning. Loved the tips such as the vinegar paper towel. I never thought I'd 'can' at this stage of my life, but I'm going to give it a go as my Harvest canner is arriving today! I will make my first ever batch of hot sauce with home grown peppers. My canner will double as a steam canner, but for this first attempt, I will waterbath the jars. Hopefully as I become more comfortable with the process, I can steam 'can' as well.

Question.. I want to store these in pepper bottles, around 8oz size and put a heat seal around the lid. How would I do this so that it is shelf safe with no need for a refrigerator until it is opened ? Is this possible?

I noticed you didn't tighten the lids after you remove the jars from the canner. Were these the E-Seal Tattler lids, or the original Tattler lids? Thank you.
@@wildheavenfarms Thanks. Have you heard of Harvest Guard? The man who owns Harvest Guard, is the son of man of Tattler lids . I use both Tattler and Harvest Guard. Harvest guard started I think 2019. What is your favorite size jars? Wide mouth or Regular/Narrow mouth. I use both.
@@peggykush6972 I didn’t know that about Harvest Guard. I have heard of them. They look just the same as the Tattler’s. I wouldn’t turn them down if they were the right price, that’s for sure! 😀

You can do this with cold jars and sauce but you have to start them in cold water and let it all come to the boil together

Hey Peggy, great question! I only tighten after processing if I notice a ring is loose with both versions of the lids.
