      Like I said they come in a few different versions but the idea is always the same.

    Citric and acetic acid (particularly when diluted to the point of being sold as vinegar) are as you said very slow methods to dissolve a broken/completely stuck screw.
    One chemical which is still quite safe to handle (skin contact is no problem, just rinse it off) but dissolves problem screws when desired is Alum.
    Make a strong solution in water and soak the plate containing the screw overnight and it will be gone by morning.
    Just as with vinegar and citric acid, any steel or iron parts exposed will be dissolved. If there are any steel or iron parts that will be submerged in the alum they can be protected by covering them with wax. Just drip melted wax to cover any part needing protection.
