    Personal opinion, but while I agree you should completely change your grease, I think you shouldn't completely fill the hub with grease... more likely to run hot. You really only need "enough" grease not a lot. By leaving space in the hub, the grease can flow about and not be all stuck in one place (which overheats it at the bearing itself). Gotta let it flow around.. Also, a very light sanding on the brake pads to remove any baked on grease on them.. Last I think you are supposed to tighten the hub nut to stop rotation, but then back the nut off a bit (like 1/8th turn). A little oil and wire wheel to the studs keeps the threads clean in case you have a breakdown, don't have them too hard to remove.
    On your trailer, they sell new plastic or bronze sleeves (bushings) to replace what's inside the shackle ends. You can get a bunch off ebay... good idea to replace them so they don't wear out the bolt or shackle ends 👍)

    It’s pink because it got moisture/water in there… then it will thin out and can boil at 212’

    Man, I'm not trying to be mean but you're going to destroy those hubs and bearings. You have to pack those bearings, not just the outside of it. The axle nut should NOT be tightened like that. It's supposed to be "finger tight", not wrenched. Your wheels are going to catch fire with that much friction.
