    Great video and exercise :)
    Maybe you should number your outdoor scale 1, 3, 5, 7, 9 ?
So the numbers match your studio scale ?

do you use an 5-step value scale because beginners have a harder time differentiating a 9 or 10-step scale and/or if you get the 5-steps, you're pretty much there, anyway?

      Yes! 100 % correct.
I’ll add that I would caution you regarding a 10 step value scale. 10 is an even number, therefore it leaves you no definitive middle value. In the studio, I use a nine value scale. This designates value number five as my definitive mid value. Also,, When you look at a value scale, you can also subdivided into three categories; darks, mid-tones and lights. With a nine value system, the simplifies it enabling you to have three darks, three midterms and three lights. For me, nine is the perfect value scale.
You are correct however regarding starting with a five value system. Developing a sensitivity to the subtleties of value Just might be the most important skill set and Art.
