This would be a wonderful dish for a picnic in the park! I bet it's one of those dishes that are actually better the next day - you could make it the day before your picnic, overnight it in the fridge, and by the next afternoon, all the flavors will be marinated together. Thank you, Albert!

@@SpainonaForkyou dont make by the proper way... the potato have to be boiling in water without be cut and peeled... The potato get other texture when you peeled after boling and just leave the potato to chill at ambient temperature first leave on water 10 minutes after boling after 20 minutes before peel and never put in the fridge because change the flavour... For best results have to be Sanlucar potato cultivated in sand from beach

Tried this dish yesterday- I didn't have parsley, so used coriander 😅 and new potatoes. MAN ALIVE they are gorgeous!!! I normally use butter, but this was so easy and delicious!! I had them yesterday as soon as they were ready and the rest cold today, at lunchtime, at work. Both ways they are beautiful. This is going to be one of my weekly dishes 😁😁😁😁😁

I learned to make this dish years ago, but with canned tuna added to it. That way it turns a side dish into a great summer meal. It's one of my favorites, not to be missed.
Adding tuna likely would be good. Another strong flavor to balance the onion.

I really like that you are using curly parsley. Love the stuff, better than the flat variety. In the past, I've never thought of parsley as a 'spanish' herb....you've certainly changed my mind about that.

You can use other types of vinegar, it just sherry vinegar adds that spanish goodness :) much love
They do a similar thing in Croatia called Blitva, but that has Chard in it instead of parsley and also has garlic. Heavenly !

Reminds me of the potato salad I had at the home of some friends from Greece. I imagine this treatment of potatoes, with regional tweaks, is found throughout the Mediterranean countries. The salad I had had oregano instead of the parsley.

(South) German "Kartoffelsalat" (potato salad) is mostly the same (chives instead of parsley usually, sometimes chopped pickled gherkins, often some meat stock to make it less dry). The north German variety is similar to what's called "ensalada rusa" in Spain.

Interesting. Very similar to a Greek style cold potato salad I grew up on but instead of vinegar for the acid, it uses lemon. I'll have to give this one a go! Cheers!

I've heard that Spanish don't cut the potatoes as you have but break them off in chunks with a knife. There is some theory about how it changes the starch by doing it. But when you have this as a tapa it is never uniform in size chunks. Jaja
Can you reheat them in the microwave in the winter? Right now, there is definitely no need to have a hot dish - but in the winter, could you put them in the fridge and then reheat them in the microwave?
I have difficulty with raw onion, so I add the onion to the potatoes for the last five minutes of cooking. Tenderizes and onion flavor is mellow.
I will fix this. Forgive me but what, no garlic? The onions will make it perfect.
I'm not sure I'd enjoy that raw onion with nothing to tone it down. Maybe a shallot.
