    Hi Nadine and Mirjam, well this is a surprise and a good one for your family. You produce plenty of milk and why not make cheese from some of it. Another family member (with help from mom) venturing out into another side area off the farm. Good luck to your sister in a rewarding enterprise's of making cheese. its really good to see your family working together as a team in all areas of your dairy farm.     I worked 10 years at a cheese factory in Holland town Wisconsin. It's been a minute since I've seen cheese but we called it a curd knife. We used a screen on the whole bottom of the table. We would completely drain the whey and add salt. This was Edam or Gouda cheese. After stirring We "hooked it up in either 5 lb "loaves" or 10 lb "jumbos" that looked identical to your hoops . They then went on carts and put in a cooler. The next day they wax coated them. We made about 1000 lb batches. We also made hickey pucks but that a whole nother story. That brought back so many memories but that was 20 years ago.

    Very cool of you Neline to show what Mirjam is up to in her quest to be The Big Cheese! Awesome too for your Mom to be able to be with her daughters at the same time! I would have loved to have heard some of the dialog between you all and heard some of the laughing that went on as well! You Mom commenting on the fact that The Rookie has to do the clean up was hilarious! 🤣 Thank you for feeling comfortable enough to share this adventure with your Fan Base and Thank you to Mirjam and your Mom for allowing us to see a fun side to your Family.     There is a small cheese factory/store in West Jefferson, North Carolina, that has discovered that the whey they drain off still contains enough butterfat to make a significant amount of butter. Maybe add butter making when you get the cheese process worked out.

    Remember the nursery rhyme - Little Miss Muffet, sat on her tuffet, eating her curds and whey. Well, children, there's the curds and whey. She was eating cottage cheese. After most of the whey is removed, the curds are pressed to remove the last of it. Then the process continues, and it becomes Jack, Stilton, Cheddar, Gouda, "Blas Kaas" (Sap Sago) or ... well, you name it. Salt is also added at some point. BUT if the milk maid is making cottage cheese, not all the whey is removed. Did that on my uncle's dairy farm in Ohio, in 1952, when I was seven. Thanks for the memories, and the video.     Every (ex) dutch inhabitant knows how to make cheese, and with a big dairyfarm, it makes sense to make cheese, adding value to milk. Hoop in the near future I can buy your cheese :D

    That was unexpected as I thought cheese making in kitchen...definitely not at this scale. Very interesting as all my cheese making classes have certainly not been at this scale. I see a future of artisan cheeses for your sister coming up. I wish I was closer to get milk..lol. Goat cheese perhaps is in your future! Good video.

    I worked during the summer in a cheese factory in Northeast Iowa in the 1960’s. Everyone in our neighborhood milked 30 to 45 cows and we had a creamery right in the middle of our township. Same thing you are doing only on a larger back breaking scale. We kept concentrating the cottage cheese size pieces into slabs and then ran them through a stainless steel shredder which produced cheese curds. My mouth waters when I think of the hundreds of pounds of fresh cheese curds we had access to everyday. Some of the nearby farmers would stop in to “visit” and eat fresh cheese curds. Our raw curds were packed in 280# barrels and picked up weekly by Kraft Foods for further processing. The creamery is long closed and there less than a handful of dairy herds in the township. One small organic Jersey herd and two multi hundred cow herds. For perspective, there were six dairy herds on our one mile of road in the 1960’s.

    Well done Mirjam. What sort of cheese? From the Yellow wax can I assume Gouda. I had some really gorgeous Mature Gouda on holiday, so tasty, so different from the plastic stuff from the supermarket. What happens to the whey? Does it go back to the cows? How long does it take for the cheese to mature? How long has she been making cheese? Have you had a taste of it yet? Why do you have a rectangular vat, surely a round one with a mechanical curd cutting paddle would be easier?
    Sorry so many questions.
    Thank you Neline for filming this. I hope that Miryam can feel a bit more confident and can feel like giving us some more information. It is nice that she has found a good side business as well.

    Looks good! Looks like you need to make a cedar board to create a table for filling the cheese molds.

    Whey is loved by hogs. Maybe a corral of hogs to feed the whey to? Then, make some flour from your wheat to bake bread. Home grown ham and cheese sandwiches? 😂 Thank you for sharing.

    Nadine, way back in my younger years, I used to teach UK tour guides and coach drivers on touring around the Netherlands. I can tell your viewers (I know you are already aware of this) that of all the cheese that I have eaten over the years, (and yes I come from a farming background too) Dutch cheese is way ahead in flavour and texture, and once you have eaten it, you wont want anything else.     Nadine , second paragraph, I buy from Philpott I live in Pueblo Colorado , about 75 miles south : the favorites Plain ,Jalapeno, Pueblo chili , chili Pequin , Garlic & Basil , also fresh Ricotta , this product sells very well , 25 to 30 dollars a pound , this again ideas for the future , both of these two businesses on the Internet, good luck & stay safe , Philpott at one time was milking 140 goats , great business , you & your family will do well in the cheese business , stay safe & have fun !
