At this moment, I have the flat modulator with the single 5V supply, and the vertical modulator with the extra supply wires. What I'll do though, if someone emails and purchases the vertical one, and has a preference for the simpler connection, I will accommodate that by whipping up a quick board with that selection. I would of course already have the right components on hand.
I think one of the reason that these don't look good is the fact that you are showing the output on a LCD television and not a real CRTs which CoCos were designed for. Two reasons for this hypothesis: 1) Unlike phosphor CRTs, a LCDs needs to convert everything to their native resolution. This certainly does not match the 256x192 output of the Coco, so there will be scaling artifacts. 2) Furthermore with LCD televisions there will be a double conversion going on (digital to analog at the computer level and analog back to a different digital resolution for the LCD.

i am a fanb of simpler... did the "single" power supply prevailed as the solution for both?

Oh, good point, I will make it a purpose to retry this through an old VCR or surely I can scrounge up a CRT around here that still works.
I concur. Composite is best showcased on a traditional cathode ray tube.
rgbtohdmi is far better that this clear picture no jailbars.
