we melt sugar in a pan and very very carefully dip the edges of the house in the melted sugar to glue the house together. You have to do 1 or 2 edges at a time & be quite quick the melted sugar glues the edges together like cement

You can also use caramelized sugar to glue pieces together. It's pretty strong and sets up fast (as well as edible) - although any method that involves using a heated "glue" to stick things together, is probably a job for the adults only.
Its because they used icing mixture instead of pure icing sugar that it didn't hold together and the kids like to eat it so hot glue isn't an option. Next time use pure icing sugar and an egg white and keep beating with electric mixer and adding more icing sugar until the same consistency as toothpaste. Works for me,,

We hot glue our gingerbread houses together first. Then we decorate them. No more stress over not enough icing and falling apart.
