In India, we call this aam papad in Hindi. It has different names in different Indian languages, for example it's called maanga tera in my mother tongue Malayalam. Since mangoes grow during summer and many of us here don't have microwaves, we spread the mango puree on a plate and keep it on the terrace under the sun. Within a couple of days, it'll be ready. My grandmother makes this every mango season as a ton of mangoes come to my house . But the recipe is different it the mango pulp is mashed and boiled and it dried in the sun in huge trays.
In Thailand, we have something similar called “ma-muang guan” which means stirred mango. We use this method for a preservation when they have too many mangoes and can’t eat it all.
My grandma makes this for us whenever we visit her instead of baking this for 6 hours she puts it on her front yard for hours we call it "am shotta" in bengali
