Zetsuen no Tempest has easily the best OST I've heard in an anime. There are many great OSTs but nothing has come close to ZnT.

I've been searching for another anime similar to Zetsuen no Tempest, both in OSTs and on how it developed the plot...but i haven't yet found any :(
I know it's been awhile but if you're still in the search.... Death Parade is an interesting show with very good soundtracks as well.... though not exactly in that classical sense... Or Fate Zero with somewhat of a solemn feel to its music. In fact, ZnT's "Reminiscence" intro kinda sounds like "Tragedy and Fate" from Fate Zero to me.
Moody Burgerson well there is Fullmetal Alchemist Brotherhood. It has one of the best plot in anime and the soundtrack is very good as well (in my opinion) but I'm certain you know that anime as well

An underrated piece (in my opinion because his "Moonlight Sonata always on the spotlight and Fur Elise) of Beethoven for an underrated musical genre for an underrated anime. I'm just glad that I discovered classical music before contemporary music that made me watch movies, and cartoons or animes with classical sense.
