Its American Television, while it might not be scripted it is entirely directed and the more the owners ham it up, the more they make off the show. There is a big reason why 1 of 2 things happen, the owners have some massive turnaround and get a bunch of publicity, or they dont but the restaurant gets a big makeover before they shut down and sell off the building to profit or break even on their failing business.
Still love the scene at 1:26:26, when the waitress recommends Gordon probably one of the last menu items, where the kitchen ist still in control of the preparation. Nice act of solidarity towards her colleagues in the kitchen, giving them the opportunity to show Gordon what they are actually capable to doing.

You know, usually, someone with Gordon's experience would usually cost a small fortune to come in and help you with your business. Gordon does it basically for free and only wants the show in return, so listening to him is important, because he has no reason to sugarcoat anything like a hired help would do in order to not get his contract canceled.
He does not do it for free, he makes a lot of money from this show. Heck Hells Kitchen he makes 225K PER episode. So yeah with Kitchen Nightmare he makes good money

And the fact that when Gordon spoke to Keone, he just listened and didn't get defensive or try and throw Una under the bus proved that he definitely wasn't the problem

So she's a winner in his life and her's. She's 77 now and still running a catering service! I'm sure Gordon opened her eyes. In 1964 and 68 she set new Jamaican records and won Bronze medals.

I just came back from a trip to Japan and was blown away both at the high quality of the food, speed of service but also how small the menus were. And I certainly wasn't eating at fancy Michelin star restaurants but just "average" places on the street or train stations. But over there, the restaurants rarely have more than 2 pages on their menus and often only 1. I definitely think it's better to do a few things really well, rather than many things subpar.

The idea of firing customers makes sense, but its normally called "barring" or "banning." And it's normally used for people that try to get free meals consistently, not people that don't like your food. For instance, I used to work at a restaurant, as a server/manager, and I would have to bar people, granted not very often, for trying to get free meals or for being disorderly. Drunks that would come in already hammered, asking to be served drinks, and when they get told no, they immediately start to argue and yell. I've also had people lie about meals to ask if they could get a new meal... After they already ate their ENTIRE first meal... And they would normally ask for a box and get two meals for one (or for free depending on whether or not the owner was there). A couple times of them doing that led us to not allow them to be served in our restaurant.

The only reason he argues is because he sees what is being done wrong and if they would have done things his way more from the start they may not be in this mess financially. He advocated for better food and she micromanaged about insignificant things like a table cloth being an inch off. He saw what was wrong and she would not listen. Now G is saying the same things. He lost his passion because he was not given a voice.

Here's the catch though, alot of their food has been modified and changed to suit the British pallets, you won't find most of the curries in India like you would in here.

It's actually quite insane that a radiologist works in a restaurant. As a radiologist you basically have a license to print money and yet you're entering one of the most competitive industries in existence.

Random tip to stay cool while working, inspired by our poor sweating server in the second episode; Wear 100% cotton, makes a huge difference, polyester, for example, doesn't breathe and even a blend of it and cotton will keep you hotter. I run hot when working, so learned about this trying to find ways to stay cooler, worked for me. 👌
I occasionally come back to these episodes just for a good laugh. Chef Ramsay is the funniest guy I know, he dragged these owners to filth with a straight face 🤣🤣
