I believe that for the purpose of saturating or desaturating any color, you should use the hue vs sat adjustment. With sat vs sat, you are adjusting the saturation regardless of the color or hue. Take a look at what happened with the blue color from the film container. It remained at the same level on the curves as the orange color. Sat vs sat is mostly used to make a global adjustments rather than local.
