I use an audient Evo4. Gain on the SM57 when record guitar is around 85-90%. The best way to adjust gain is by looking at your recorded wav forms Hiss is most probably because of cable. A minute hiss is normal. You can remove that using plug-ins like Izotope RX, waves NS, etc. I've used a little waves NS for this video For recording acoustic guitars with an SM57, an position apart from pointing at the sound hole at 90 degrees should sound good. So try different positions like 45 degrees at sound hole from the bottom, pointed at 12th fret, pointed at 17th fret, near, far away, etc and see which works best for you
