    tip for storing root crops, use a bucket, box or whatever, layer the crop with wood shavings, takes any moisture away and keeps them in a constant temperature, I've done it with onions, potatoes, carrots, beets and garlic. Works amazingly well. They never get soft or anything. usually I'll have one or two that'll go bad but, that's out of 150+ of each.

    Do not store sweet potatoes, pumpkins, squash, melons, or alliums in a root cellar. Cellars are meant to have high moisture. The aforementioned should be kept in cool and dry. Sausages and Hams once cured also benefit from cool and dry. They used to bury summer sausages and hams in the oats bin years ago as it kept a cool dry environment which made them keep well. We have 30 below winters often. Built mine nearly 30 years ago and put a full two and a half feet of dirt on top, all around the sides. Never freezes inside and because it's fully covered with dirt, stays cool in summer.

    Your cellar is real nice wish ours was this cool but in south MS The temps are just to hot.

      look up earth sheltered homes - - Arizona at 115 and earth temp at 68 degrees... 47 degrees cooler...

    you can paint the concrete with swimming pool paint to controle moisture

    If pouring a concrete flr, put heavy plastic on ground & pour on it. It helps keep humidity down, perhaps in some situations u may want the humidity ? If I get to build my rootcellar/stormshelter, I plan to keep dirt flr.

    It's always fun seeing the fruits of one's labor. I've been following this build all the way. I am a little confused though. Is the humidity necessary for some items such as the sausage & detrimental to others like the sweet potatoes, or is high humidity just a general nuisance with the root cellar?

      The higher humidity is necessary for the freshness and shelf life of most vegetables in the cellar. Sweet potatoes are one exceptions and I'm sure we will find a few others as we get into this further. This is the first time I have tried it with the sausage since this option was not available in the past. The mold is suppose to help with the flavor...we are about a week a way from tasting it and we will see if it is true! I hope this helps?

    Is the humidity high because of the structure of the floor being in direct contact with dirt instead of floating on 3" of dense foam ? You could test the floor for high moisture.     I always thought you were supposed to keep the moisture and humidity down especially if you're storing potatoes and stuff

    i would add 90deg elbows to those intakes so that they are pointing down to keep wind driven rain out.

      Maybe a dehumidifier? If I did this I would plumb it to the drain to make it easier.

    Do you think lack of air circulation could be contributing to mold growth? How much air circulation is ideal?

      Joseph - I actually have a small box fan in the cellar run 24/7. So I don't think that is the issue but I will watch it closely!

      Hi, nice to see all the produce.I don't really know what is best for a root cellar,but I can tell you that in order to keep an underground storm shelter/bunker dry & free from mold, it is best to keep it sealed & NOT let the air flow through continuously, otherwise the difference between the outside air temperature & inside causes condensation.For shelters when not in use for human habitation, keep them sealed,but use a dehumidifier sometimes.I have friends with bunkers & we all find the same.The expanded polystyrene is great.Sometimes they use massive slabs of it up to 1 ft thick for insulation, then put earth on top.Once you put your 2.5 ft of earth on top & bury the whole thing, you should find the temperature stays fairly constant.best wishes from the U.K.

      Thank you Michael for you input, I have watched your build and I would definitely call you an expert! Great info on the foam also. In our case I do need the moisture to keep the vegetables fresh and maximize shelf life.

    haven't found anything yet well we found 12 acres but they are asking 80 thousand dollars for it still waiting onGod but sometimes its hard

      Is this property in the Ozarks? Everything is way cheaper here along interstate 44 in MO. We bought 23 acres for 30k. Granted it had nothing but rocks and trees but that's comparatively cheaper than the rest of the country.
