I really need to do this kind of routine at least once a week... Uni is tiring ;;
make sure to take care of yourself! uni is a stressful time ;-;
I would definitely second the recommendation to heat your oil before putting things in, especially tofu! If you don't, the tofu will suck it all up like a sponge before it actually has a chance to brown, which then increases the chance of sticking because completion of the maillard reaction is part of what stops things from sticking to the pan!

Annika’s take on gado gado at the beginning of this vid: lacking some ingredients like steamed potatoes and green beans, but giving it a pass due to the fact that you might utilized every ingredients available in your apartment
P.S. - There are alternate versions to this dish: Ketoprak which uses omelette, lontong (rice-cake thingy?), and beansprouts to accompany the fried tofu and the peanut sauce, and Karedok which is the raw version of Gado Gado because all the veggies are raw (less effort in veggie prep)
