You're spot on about mechanics being the most important skill to help you climb, however there are things about mechanics that can be taught and learned. Most importantly the abilities and animations, combos, ranges, timings, movement speeds of all the champs you will go up against. There's a lot of champs in league, so this will take some time. Probably the best way to learn this is become proficient at piloting each and every champ. Once you understand what your opponents champ wants to do, and you understand your champ, you can develop mechanics to counter your opponent. Easier said than done, but at least now it has finally been said.
Another method to learn mechanics is to 1v1 as much as possible, die a lot, be very frustrated, pay attention to the minutia, learn from your mistakes and slowly get better.
There are champions and ways to carry that do not require exceptional mechanics. You can easily hit Emerald maybe even Diamond with Macro + Right Mental on champs like Trundle, Tryndamere, Garen, Malzahar, Annie etc. The reasons those "improvement channels" are quoting macro over micro is for the same reason you explained. You cannot teach someone to micro. You can teach them to macro and takes you quite far while you work on your micro
