Chinese Stir Fry Made Easy! Egg Tofu with Shrimp 虾仁炒蛋豆腐 Beancurd, Prawns, Vegetables Recipe

- We recently received a request to create a stir fried tofu dish similar to those found at economic rice (economy rice or cai png or cai fun) stalls in Singapore. If you're unfamiliar with an economic rice stall, think Panda Express, a popular Chinese food chain in America that serves a wide variety of delectable dishes to go with your choice of rice or noodles. We have lotsa economic rice stalls in Singapore. Although the original request was to recreate a cai fun tofu dish, we've added a few more ingredients to make it more wholesome so that you can serve it with steamed rice and call it a meal. The taste is just as good, but more nutritious.

Stir Fried Egg Tofu with Shrimp 虾仁炒蛋豆腐 Recipe
Ingredients:
Serves 4 pax

300g egg tofu
4 cloves chopped garlic
20g thinly sliced carrots
160ml water
1.5 tablespoons oyster sauce
1 tablespoon low sodium light soy sauce
1/3 teaspoon sugar
1/3 teaspoon salt (taste your sauce first before adding)
100g peeled prawns
100g vegetables of your choice
A few dashes of white pepper
Some cornstarch solution

hello what is the difference between silken and egg tofu?
the egg tofu has eggs in it. Go to you local Asian Store as you wont find them in most American grocery stores.
How did you cut the tofu into that shape (round)?
