In this spread of modern Southwestern fare meets traditional Mexican cuisine, there are unique offerings such as the Hatch Burger that features juicy wagyu-chorizo patty layered with green Hatch Chile sauce, fried quail eggs, and cheese between toasted brioche buns; and the Mar Y Tierra, where a tender, 28 day-aged skirt steak is wood grilled then topped with Hatch Chile that’s stuffed with fresh shrimp, salmon, sea bass, and creamy Jack cheese. And of course, the taco! The Fried Chicken Hatch Tacos are an homage to Texas, as crispy fried chicken is topped with Hatch Chile queso, pickled onions, and Fresno chiles on soft flour tortillas.
The dishes served at the restaurant directly draw from Chef DeLeon’s sacred, multigenerational family recipes rooted in Mexico. Chef DeLeon channels years of working alongside his late father in family restaurants and the renowned Chef Patricia Quintana, who personally mentored Gabriel near the start of his career.
