Apple: "Quantizing involves the rhythmic correction of audio or MIDI regions to a specific time grid. Any notes not played in time are moved to the nearest position on the grid." Why is it so important? Doesn't it make sounds less human? Perhaps you could do video about Quantize? I'm new to keyboards, just bought Yamaha MX49 and Logic to have fun at home! Thanks for your informative videos!
Quantise makes the notes ON BEAT so if it’s off a little it’s gonna sounds off beat but for sum instruments like guitar I usually humanize it (shifts it off a tiny bit) to make it sound more natural

the mute option doesn't work for me. Everytime i try to hit "M" to mute a midi note, the whole track gets muted instead. How can I fix this?
your settings are probably different in your case its most likely control+m

Is there a key command for: duplicate all notes one octave higher/lower?
Command A to select all and then hold down option click and drag is what I do for that.

Yes! Logic Pro X --> Key commands --> edit... Here you can review or edit all the existing Key commands.
If you’re using multiple daws do you make the shortcuts the same for both or do you just stick with what the defaults are?
Good question - you could do either or. In Logic if you hit option K you could customize all the shortcuts your used to if you like
