Nice catches, especially the trout! Here's a tip (maybe you're already doing it, but for anyone else reading this...): It's a good idea before handling/unhooking a trout, to wet your hands first. The trout's slime comes off pretty easily, so wetting your hands before touching them helps keep the slime on them (which keeps them healthy) and also keeps the slime from getting on your hands.
