It doesn´t matter how accomplished of a chef you are (btw, sounds like someone has a bit of an ego here, just like most chefs so not really surprised), the ingredients you can get locally in China do not taste the same they do in the UK. Simple as that.
@@davidtsw It's a good job that most people are open to learning and adapting to the ingredients available also showing appreciation of the skills of others. I have served my food to people from a wide variety of cultures with great success but I am always willing to learn. Again sad that you would judge a stranger on your own preconceptions. Nevertheless nice to share a chat. I will now go stir my braised ox tail with ginger, shallots and allspice. Cheers
