  • Today we go super deep into the Mai Tai. A while ago we had the idea of going through all the amazing Mai Tai riffs popping up. This drink is just such a wonderful template and that shows in not only the drink's enduring popularity but also there seems to be a different version or riff on so so many menus these days and not just in Tiki spots. But after discussing it a bit we decided that before doing all the riffs we really needed to tackle the originals. From the drink's inception in 1944 until 1971 there were four major builds on this one drink, and they're all different enough to warrant a little taste testing. So today we're doing all the classic Mai Tai recipes for you guys! Hope ya'll enjoy and see you In the comments!

    True to form we made a mistake in this video. Somehow we left 1oz of Jamaican Rum out of the edit. So, add 1oz of Jamaican Rum to your Royal Hawaiian and sorry! :)

      First time watching the channel. Sub and liked. this is great. If you can't drink the drinks for diet reasons, why not taste and spit like a wine tasting? saves on the calories but you can give your opinion. Anyway just a thought.

      do you know what you should do... you should do "Hot Ones" but with buzz. and have celebrities and comedians coming in, you'd make them drinks, get them hammered and have them tell stories about their epic parties and best bars they've been to. that would be cool 😎

    I’m dying of laughter thinking of all the improvements you guys have done on the set design and editing, only to have Marius come on set, take a sip of every drink and say it tastes like … booze. I can almost see smoke coming from Leandro’s head! This needs to be a regular segment! Flavor Nuances with Marius! 😂

    You can talk about great home made ingredients, top shelf booze and getting the ratios perfectly balanced, but the thing everybody overlooks and what truly makes a Mai Tai an adult happy meal is the salad up top. In the 90's the Royal Hawaiian hotel still had marble bathrooms with bathroom attendants. They're all gone now, replaced with cheap Formica and no guy in an old suit basking in farts and dollar sprays of cologne. What's gone too is the exceptional garnishes they'd put on Mai Tai's. Each one, no matter how many Mai Tais deep you were, were presented with no less than a cherry and pineapple wedge skewered on a paper umbrella along with a mint sprig and the most beautiful orchid blossom ever. How I miss those days, picking people up at the airport, bringing them for a first pacific ocean experience with sandy feet and a perfect Mai Tai in hand trying to keep the new arrival awake until 10 pm so the jet lag wouldn't suck so much. Shout out to bathroom attendants everywhere if you still exist. You may bask in more farts than a returning flight from Cabo, but I miss you. The next Mai Tai's on me. Full salad.

    My wife and I visited Kauai'i in 2011 and the Mai Tai's we enjoyed were made with white rum, POG juice (Papaya Orange Guava mix hard to find outside of the islands) and a dark rum floater. We loved them, but discovered the much better Trader Vic's when we got back home. I miss the POG juice version sometimes, mostly because it's hard to find POG juice in the Midwest.

      There’s LOTS of choices on Amazon. I always get my passion fruit purée on Amazon - Funkin Pro. Best stuff around for unadulterated fruit purée.

      Love Kauai- POG is pineapple orange guava. Not papaya. And yes the free hotel ones are basic and just pineapple, white rum, then a afloat of dark rum at the top. Even more economical I think is the POG juice.

    I make the Trader Vic's original pretty regularly. I've always kinda turned my nose up at the Royal Hawaiian, but based on Marius' review, saying he liked it and the original the best, I think I'll be making a Royal Hawaiian today. (every day is a fight against my inner snob.)

    Marius cracks me up, Leandro making delicious cocktails and the reviews are "it's good" or "It's bitey" too funny man. I'm a fan of the Trader Vic mai t ai, espcially the spec used in the Smugglers Cove book and I use Diplomatico Reserva or Mantuado if I'm out of the other. But now I have to try some other versions of the cocktail.

    A few years ago, I was in Kauai trying every Mai-Tai that I could, and it was pretty evenly distributed: big hotels and destination resorts did the sweet pineapple ones, and the smaller bars and restaurants did more traditional ones.
    The best one that I'd had was at a bar near Poipu Beach. It was obviously a cheap well drink version for happy hour, but it was simple and nailed the sweet-tart citrus-almond-rum of the Trader Vic's version. Others at major hotels were really pineapple-forward and geared towards tourists. All of them were good, and I really enjoyed my time there.

    Hi Leandro, just something I read:
    Martin Cate says in Smugglers cove, that the replacement of the Wray and nephew 17 must not include Rhum Agricole, because the Martinique rhum suggested by trader Vic was described as dark and nutty, therefore it probably was a Rhum traditionelle, something more in the likes of a blended black rum.
    Cate recommends a combination of a long aged blended rum, and a lightly aged pot still rum.

      Exactly this. Denizen Merchant's Reserve 8yr is specifically blended to approximate the profile of W&N 17yr. It makes an absolutely fantastic Mai Tai.

    Trader's Vic Mai Tai is just beyond good easily my favorite version of this drink and its about the only thing I drink anymore lol. I've not tried the royal hawaiian though so I think ill give that one a shot this weekend.

    probably a year late but i recently worked at the Trader Vic's in London before it shut down, there was a pre-made mai tai blend which was 2 parts Myer's rum, 2 parts Mount Gay and 1 part Rhum Agricole. We'd use 50ml of that in each drink with 20ml Curacao, 25ml lime and 12.5ml orgeat. Not sure if it varies between different Trader Vic's but that was ours

    My first Mai Tai variation was from Suite 114, a now-closed bar in Toronto. It had Plantation Grand Reserve, Wray Overproof, cashew orgeat, and Giffard Pineapple. It was awesome. I suspect it's the same specs as the original Mai Tai, just different ingredients here and there.

    This was kinda the process at my house. I started with the trader vics one and kept tweaking it til I got it where I liked it. I wound up at basically that final recipe with the pineapple juice.

    Gotta use a blanc rhum agricole for the first recipe! Neisson and Rhum JM are my go to agricoles. And if you up the sugar you can sneak in some Smith & Cross!

    Funny the timing of this video. We just got back from Oahu and spent a week at the Hilton Waikiki Hawaiian Village. I believe it's the birthplace of the "Tropical Itch" (Cough Cough... future video topic, they are AMAZING!). Anyways they did a variation of the Vic's Mai Tai, (Which they call the "Village Mai Tai") The only difference was, on top of the 1-2 oz of gold rum, they added a float of 1oz dark rum. I replicated it at home using Bacardi Gold and Kraken dark rum but that's what's available to me here without traveling 15 miles to a big box liquor store. Still turned out well enough that my wife can't distinguish it from the Resort.

    So according to Martin Cate, it likely was not rhum agricole, but a molasses-based funky rhum traditionnel that was used in the adjust recipes. Agricole definitely makes for a good Mai tai, but if we're talking about a historically accurate Trader Vic's Mai Tai, just using all Jamaican is going to get you closer to that, seeing as Le Galion is the only distillery left in Martinique making molasses-based rhums and it's pretty hard to get in the US.

      Denizen Merchant's Reserve 8 year is a great option, it was blended with input from Martin Cate with the goal of replicating the original Wray and Nephew 17 year. I agree that the grassy Rhum Agricole seems out of left field for what he was trying to achieve by blending rums to replace Wray and Nephew.

    I've had so many arguments with fellow bartenders and managers about the mai tai. This puts everything in context. Instead of fighting each other I'll simply say "that's the Hawaiian/Beachcomber/Trader Vic version"

    Look at the Smuglers Cove version. *chefs kiss* Variation on the original, but also LOTS of info on the rums used after the 17 YO W&N. The Rhum Agricol noted on the menu of T.V. was not Rhum Agricol by the description/tasting notes on it. Check it out in the Smuglers Cove book! (also see Denizen Merchan reserve which is a great, custom blend for Mai Tai's, and the fourth coming Appelton Estate 17 year supposedly the original W&N blend and "Dagger" clone.

    In my effort to make a tasty Mai Tai as cheap and easy as possible, I have had success with: 2 oz Appleton Estate Signature (Already a blended rum and an excellent mixer), 3/4 oz Lime juice, 1/2 oz Pineapple juice, 1/2 oz Cointreau, 1/4 oz Giffard Orgeat. I crush and rub a mint leaf around the rim and drop it on top. Despite the small amounts of flavorings, it's surprisingly well balanced.

    My go to recipe for a Mai Tai:
    .5 ounce Grand Marnier
    .5 ounce triple sec
    1 ounce sweet spiced rum (Bumbu or Captain Morgan Private Stock)
    1.5 ounce coconut rum
    5 ounces Pinapple juice.
    Splash grenadine

    Hold on, on the first Mai Tai (since it's supposed to be the original recipe) isn't it supposed to be 0.75oz of lime juice and 0.5oz of curaçao?

      half oz curaçao but the lime juice is only named by Vic as “juice of one lime” which can be anywhere from .75 to 1 oz on average

    Please use 2 or 3 times as much ice as you are to shake the drink. Enough ice will result in a colder cocktail and prevent excess dilution from melt. And you won't need to pile as much in after you dump in the glass.

    Could I use a spash of ginger beer instead of ginger syrup?
    I'd love it if you could include substitutes for those of us working in bars that carry fewer ingredients. Maybe you could do your perfect version vs the more common commercial version? Or just list possible substitutes in your recipes in the show notes?
