I don't trust outside food. So I cook foods from other cultures at home. I have made manti, Afghan macaroni, borani bademjan at home. There's a Afghan chana dal dish with curd and mint called lakachak II plan to make sometime

One thing you guys didn't try was "Kuroot" ... Afghanistan me veg food k boht badi variety hy...my granny was from Peshawar and she made me eat a lot of Afghani food ..all veg as we are pure vegetarian...it's awesome

Not only begoon vaja, many kinds of cooking are done with begoon in Bengal. My MAA makes about 6-7 different dishes with begoon.such as tel begun, ilish begoon, aloo begooner tok, sorshe begoon, begoon bahar, begoon posto.

We are Indian ...my mom cooks amazing baigan aloo it looks exactly like this... Even I learnt n we excel in my whole extended family or frenz
We call this Kabuli pilau or Pewahwari pilau. We have pakistani version, we call it Salona Chawal or simple pilau or white pilau, exactly same minus carrot and rasins. We have beef, lamb and chicken versions. Its my favorite.
The difference between biryani and pilau is clear in pakistan, pilau is meat stock (yakhani) based rice with meat or chicken etc while Biryani is masala or sauce based rice with meat or chicken, pilau is uniformed in colour and Biryani is multicolored rice.

Pakistan history and Afghans history is interconnected, thats why you get more Pushtuns in Pakistan then afghanistan. The afghani empire ruled most of pakistan for centuries after agreement with Mughals, as both were muslim, set aside their differences. I am half pushtun and Mughal actually....I have allot afghan friends, rest assured they love us, only ones that do not are hazara shias and uzbek shias due to sunni shia difference, they usually pro iranian...

The part of India I come from has the same difference between "pulao" and "biryani". In fact biryani has only recently become popular there. Traditionally we are used to having pulao. Thanks for sharing the information though.

I tried long back... say around 5 years back... Thalassery Afghani CHICKEN in Hopefarm Bengaluru...it was just mind blowing then ..you open the container and are welcomed by a layered poached egg on top..which u slowly break into with a spoon...from this u then enter the tender chicken gravy that have delicious kaju paste added to it with chicken so well cooked..the split spreaded yolk on the chicken made just mind blowing memory for my taste bud...I wish they might have retained the same cook now !

I’m Afghan and I cook very well, so I would like to clear a few things.
We Afghan love meat and vegetables but not the daal.
Now we make same thing but in two different ways. Sometimes we like meat not to be tender and sometimes extra tender. That’s why sometimes you will same kebab very tender and sometimes very chewy.
That’s not yoghurt but we call it chakka, I think when you take out the water of yoghurt and make it creamy.

If you are reviewing food, you should know how much amount of lemon should go.
And for kebabs, if the meat is hard now, it was also hard when it was hot. Not necessary that it has become hard after it has cooled down.

Aush is boiled with soup (but you ll find it at afghani homes)
Try visiting afghan hindus who migrated in 90s. You will find more vegetarian dishes than you will find in restaurants.
