When you hunt or slaughter an animal those hooks are usually either tied to or stabbed into the hind legs between the bone and ligaments toward the hind hoofs and it is lifted off the ground usually at first to drain the blood and then remove the organs when gutting the animal. It is a better way to shift the organs so you don't accidentally pierce the stomach or intestines of the animal.
Crisp and clean work as usual, very nice. I avoid working steel down in the round, as you are doing in the die at the start of the ball ends. It can lead to cracks inside the bar.
Interesting this popped up.I've been kicking around a design for a gambrel.It'll be slightly different than yours,but now I'll incorporate the swivel design which is a huge plus on these.Makes skinning and processing alot easier.

I like 4140. I tried 1045 but water quenching stresses me out haha. I don't have a rockwell tester, I just follow the heat treat charts for each type of steel.

Yes, a blackened wax finish. It lasts for a good while with wax touchups.
