my mom does it a filipino way, she slow cooks it in a pot with ginger, onions, whole jalapenos, salt pepper and other ingredients thats all i know ill try to see what else she puts in it but its super amazing, youll love it i swear, it takes the flavor of the mackerel and mellows it out with the soup its in and makes it wonderful
Where I grew up (and still am) we just go catfishing and we just open belly and pull all organs out then lay down some foil chop up onions, bell peppers, tomatoes and add salt and pepper then wrap up in foil and throw into the fire

I’ve on two months disability from a blood infection and it’s a slow recovery back to 100%. I’m a butcher and finding these videos is pumping me up to get my knives out and working again. I’ve been on the market for a fillet knife and you know where I’m going to go for that. I’m in the PNW of Canada. I’m tempted to order in some of that Everglades to see what all the fuss is about.

Great work. Love the start-to-finish descriptions. It really helps in case I've missed something in the way I do it (West Central FL). My 'quick King' recipe is Everglades seasoning, tarragon covered in Thousand Islands dressing and topped with Parmesan bread crumbs. As you pointed out icing the fish is essential to quality meat and taste. Kings are an oily fish and are easy to spoil if not bled and iced quickly. They can be frozen tho and still come out great. Here's how I freeze them: rinse in the fillets in fresh water, drip off excess water, then cover with sea salt or Kosher salt. Work the salt thoroughly into the meat until the meat regains its texture and is slimy. Cover with tight sealing cellophane wrap. They keep frozen for a long time this way. The salt cooks out and they taste fresh.
Had Kingfish ALOT in SE Asia and absolutely loved it. There they normally serve it in steaks - literally just cut cross sections of the fish and throw it on the barbie. Lovely white meaty flaky meat. My all time favourite.

Hey man. Quick tip when drilling through finished surfaces. Painters tape over the area your drilling will keep the surface from chipping. I do alot of furniture work as a hobby. So im not drilling through my boats console. It works for all finished surfaces though. Anyway Rob, have a great day.

It's MUCH better then some say, and i think a lot of those who say it's a "trash fish" have never even tried it, because i for the life of me can't understand how anyone would think it wasn't good.. Hi Rob, first let me start off by saying love your channel. I am 54 years young and I have never cleaned a fish before. When I was a young girl my dad tried to make me help him clean some fish.. Long story short. I lost my guts! When he passed away almost 20years ago he left me two beautiful hunting knives in the sheaths. My question is, what kind of fish is good for a beginner to clean and fry. One that I can get from the super market to practice cleaning out the guts and cutting it up. I will be frying it when I'm finished cleaning it. Hope I can do it, it will make my dad proud!!!!!!!!!!!!!!!!!!!!!! I truly miss when he use to take me fishing almost every weekend when I was a little girl. Have a good one
Rob...just had my 24ft Well craft re-worked...FLUSH YOUR BILDGE...we ran out Friday to 8-A out of Canaveral...hit something and broke the seacock valve...my twin 2200gph bildge pumps burned out...we had to call the Coast Guard....today while in the aft deck hatch to fix the valve...I found a wad of fiberglass mat in both pumps!
Glad the boat is coming along, Here in Texas a lot of people say kingfish is no good, but I love them. I do a light blackening in Tony Cachere's and butter and it always impresses. I've fed it to a bunch of people who said kingfish was gross or people who didnt try kings because someone told them they were no good and made believers out of every single one.
Ya know Rob? I'm a person who hates to see animals suffer, but I do like the way you freeze them immediately after catching them. To me, it seems a bit more humane in ending their lives. I'm also glad you eat everything you catch (unless too small) and not mutilating them or being cruel to them just for the sheer sadistic fun of it, I can respect that!

The best way to cook king fish is to cut it in circular Pieces with the centre bone , and marinating it with the past of ginger garlic and a bit of turmeric and then shallow friying it with semolina the East Indian Surmai Fry

If you have smelly, fishy hands, wash your hands in pasta water i.e. the water that comes out after boiling water, and they won’t be smelly at all anymore!! I tried your idea with breadcrumbs and pecan nuts on Kingfish, it was delicious. Normally when I cook fish, (the whole de-scaled fish, head and all, minus the gizzards), I lay down 2 big pieces of baking foil that fit a few inches each side past the length of the fish, then I put about 5x6mm slices of butter onto the foil about the length of the fish, sprinkle flaky salt, & dried thyme oregano & basil herbs, about 3 round slices of lemon; place the whole fish on top, add 2-3 slices of butter and lemon inside the fish, then repeat the 5 slices of butter, salt, herbs and lemons on the top of the fish. Wrap the foil around the fish and place on hot BBQ for about 8-10 minutes each side of the fish, (this is for around a 3” size fish, sometimes longer if a fatter fish), once done take off bbq and open up the foil, the skin peels off and sticks to the foil, and the meat just falls off the bone. When you eat the meat it just melts in your mouth l.

So I don't think it's with king mackerel (but I imagine it's done), but something I'd be interested in seeing is you trying partially dried fish. In Korea, what they'd do is in the cold, they'd partially dry certain fish (like pollack, cod, etc) and then broil it. Kind of like with beef, the drying/aging concentrates the umami and makes it really good Edit: forgot to add, but all that's added is coarse sea salt and when you eat it (with white medium grain rice, preferably calrose), you squeeze lemon juice over it. It's really good like this!

IMO Kingfish is somewhat underrated. I like it specially smoked in a dip or making King Balls.

I tried your idea with breadcrumbs and pecan nuts on Kingfish, it was delicious.
Normally when I cook fish, (the whole de-scaled fish, head and all, minus the gizzards), I lay down 2 big pieces of baking foil that fit a few inches each side past the length of the fish, then I put about 5x6mm slices of butter onto the foil about the length of the fish, sprinkle flaky salt, & dried thyme oregano & basil herbs, about 3 round slices of lemon; place the whole fish on top, add 2-3 slices of butter and lemon inside the fish, then repeat the 5 slices of butter, salt, herbs and lemons on the top of the fish. Wrap the foil around the fish and place on hot BBQ for about 8-10 minutes each side of the fish, (this is for around a 3” size fish, sometimes longer if a fatter fish), once done take off bbq and open up the foil, the skin peels off and sticks to the foil, and the meat just falls off the bone. When you eat the meat it just melts in your mouth l.
When I say 3” size fish, I meant the thickness of the fish, not the length 😄

So I don't think it's with king mackerel (but I imagine it's done), but something I'd be interested in seeing is you trying partially dried fish. In Korea, what they'd do is in the cold, they'd partially dry certain fish (like pollack, cod, etc) and then broil it. Kind of like with beef, the drying/aging concentrates the umami and makes it really good
Edit: forgot to add, but all that's added is coarse sea salt and when you eat it (with white medium grain rice, preferably calrose), you squeeze lemon juice over it. It's really good like this!
