The only reason the 'race tire' is faster is simply because the gear ratio has changed due to the race tire being larger in diameter/circumference. You could replicate the speed differential by changing the front or rear sprocket(s)
Some tires can be a bear the best way I found to not pinch the tube or bend the wheel is put the tube in the tire inflate it just a little then zip tie the tire or tape it all the way around in like 6 or so spots then start the valve in the wheel set the rim on a 5gal bucket and just push down it should just pop right on then remove tape or ties inflate and done.. I went thru like 3 tubes once and bent my wheel with whatever tire I was putting on it was a stiff bear and it was cold so maybe that had something to do with it. But once I found the bucket trick I never looked back
Personally I think the stock tires would be better if you to run off the road to avoid a accident. The other tires wouldn't work well in the grass or lose gravel
