Don't dispose of the grease after cooking meats. That grease is important as a perservative and as a (I kid you not) HEALTHIER alternative to butter in many recipes. Use a cast iron pan when possible. Cooking bacon, eggs, and other fatty meats is good for the pan itself. You should still wash it, but it takes minimal soap usage. Cast iron pans do not like having acidic sauces like tomato sauce cooked in them. Avoid doing that as it will actively break down the seasoned surface adding bad bits to your food. Do not throw away any part of the meat if possible. Bone and fat can be boiled for broth. Boiled meat seperates from the fat, and will be good for cooking beans. Bone is EXTREMELY high in nutrients making it a good source of important amino acids.
