Any mortals that dared to look at their true forms would die as their puny brain couldn't take the information overload like Semele, a princess, that requested Zeus to see his true form but the cost of her life.

Honestly Helios did not deserve this even Kratos felt bad for killing him
Young kratos was blind by rage.
In fairness, he did try to trick Kratos into getting himself killed. But yes, Helios had been gruesomely injured and no longer posed a threat at this point. Kratos could walk away and leave him there. Moreover, he chose to rip Helios’s head off, making sure of the immense pain and suffering.
I wish that the new Kratos kept being this agile
He did say his death wouldn't lead Kratos to Zeus. Kratos tells him that's where he's wrong. He had a plan. He needed Helios to light his way. Without the light, the doors ahead wouldn't be revealed.
