That's something novice riders get wrong... 1000cc are more forgiving to throtle mistakes than the 600cc, the power transfer is smoother and you can ride the bike on lower RPM to get the same speeds of the 600cc, then on the 1000cc the gear ratios are longer and they get throught the gears faster obviously. So don't think you'd have easier on a 600cc, it's not the case. My advice usually is to get experience on a bike up to 300cc, then if you will only ride on the road and be chill, make the jump to the 1000cc, if you want to go on track, check how's the track you will be on the most, if it's full of corners and small straights, maybe a nimble 600cc is better, for a full track like they ride in MotoGP and WSBK, then 1000cc will be more fun and forgiving. Most importantly, is not about the bike itself, it's about the rider's mentality. If you get on a bike thinking you're Marc Marquez, even a 125cc will be the end of you, respect the bike and don't be over confident and you will die of old age having ridden whatever you wanted in your life.
if you get lucky (or unlucky?) you might survive, crash has to happen in one of the more open areas. There's a clip of a crazy crash where the dude goes flying, survives, and a year later is back racing lol
