I am so happy I stumbled upon your chanel! The bonus was finding that you actually have a farm in Italy, which produces true EVOO! I have been watching documentaries on the extremely poor quality Olive oils we have in our stores in the US ( olive oil mixed with other oil, then colored), and fake Olive oils in the market. Companies ship their oils all over the world, making it impossible to actually track their origins. I think it would be fantastic to promote your product with a video on the process of making Olive oil!!❤ ❤
I can't wait to try this. I have lots of rosemary growing in my backyard. Now I have an idea what to do with it. Besides baking it with pork or braising steaks. Thanks
Great video You clearly have a passion for cooking. And for life If you use the herbs with their flowers the odor is sweeter and the health benefits are most concentrated in the flowers and tops
Hey Joe, my first time on your channel. You're a great presenter and should have your own TV show😀 Off course, i have subscribed and liked your video. Thanks for the health tips. Blessings.
Honestly, came to this video to learn how to make infused olive oil for my diet. The ending made me tear up. Because I like that idea, make a mess with the family. Food taste better with those you love.
Great oil recipes but using the fresh ingredients in the bottles will introduce a source for botulism to grow, even in oil. Shelf life is generally 5-7 days unless you store in the fridge which extends the shelf life to 3-4 months. Completely dried herbs are much safer.
Great question! Olive oil can indeed be sensitive to high heat, but for infusing flavors like rosemary, it’s okay to heat it gently. In this recipe, we’re not aiming to fry or cook the oil at that temperature but just warm it enough to help the rosemary release its essential oils. You can keep it on a low, steady heat (around 120-140°C/250-280°F) if you're concerned about preserving the olive oil's quality. Thanks for pointing that out! 😊🌿
I would love to do it with just garlic is it the same process that you do with the rosemary if not can you do one video to show us how to infusing garlic with your olive oil
Great question! To clean the bottles, I recommend rinsing them with warm soapy water first, then using a bottle brush to get into all the nooks and crannies. After that, rinse thoroughly with hot water. To remove any excess water, you can turn them upside down on a drying rack or use a clean paper towel to absorb any moisture inside.
Yes, you can dehydrate the strained rosemary after making the infused olive oil. Just make sure to thoroughly dry it out using a dehydrator or by spreading it out in a well-ventilated area. Once dehydrated, you can use it as a seasoning in other dishes!
What is the the shelf life for the olive oil once it has the rosemary in it? Does it stay shelf stable, or should we refrigerate it after a certain period?

That heartbreaking moment you use all your Rosemary in the hot oil because you didn’t know you needed a fresh sprig for the bottle 🫣 oh well hopefully it’ll still turn out good lol great video thank you for sure sharing
This is great for cooking but can also be used as a hot oil hair treatment to stimulate the scalp and encourage hair growth
Thanks that's good to know.
Prior to bottling, while it is a little warm with a loaf of bread and a bottle of wine. So good!

I can't wait to try this. I have lots of rosemary growing in my backyard. Now I have an idea what to do with it. Besides baking it with pork or braising steaks. Thanks
I also want to ask, after it is made, what is the shelf life?😊
its not pasteurized, so not too long. I make small batches and its gone in a week.

Can you use a crockpot? Can you dehydrate the strained rosemary?
Hi Chef! Could I do that with Basil as well???
do yourself a favor and start at 3:15
What brand olive oil do you use thanks for your reply

5-7 days for the heated oil WITH or WITHOUT the fresh rosemary?
If that fresh rosemary is going to decrease shelf life, I won't be adding it.
3:53 - Isn't 180 degrees too much for the olive oil? I'm using 180C for most of cakes in the oven, olive oil is a bit fragile to high temperatures.

How long is it good for on shelf and in fridge?
Someone in the comments said probably 3 months in a fridges, and a week outside it.
I don't have a thermometer. Can I just bring it to a slow boil and then turn OFF the heat and let it simmer a few minutes?
I heard that you can introduce botulism to the bottle when using a fresh sprig?
Ok thanks for the top so can I make the time oil and oregano oil and so on just like that too
How long does this rosemary oil last on the counter?
He says, " refrigerated two months tops" (answered on another post).
How do I do rosemary oil with dry rosemary leaves?
Why is it cloudy? I cannot see the rosemary inside the bottle.
love the video Joe but to those with laminate countertops - do NOT move a hot pan and sit it directly onto your countertop!
hit countertops are granite, not laminate.
lol... Char must have laminate counter tops, or melted some in the past. That is hilarious.
I would love to do it with just garlic is it the same process that you do with the rosemary if not can you do one video to show us how to infusing garlic with your olive oil
how do you clean and get the water out of bottles?

@@Cookingitalianwithjoe I washed, air dried overnight, then put them in the oven at 175 degrees for two hours.

Perfect and easy to follow
You didn't mention washing and thoroughly drying the rosemary before cooking.
Sharon thanks for sharing how do you make the Italian when the same way?
I love John Madden

refrigerate it for 2 months tops.

Do you do the same with all the other herbs to infuse your olive oil and with garlic
Ciao Bello!! Oven...200 degree's? I see every videos doing stovetop... Telle me please, would oven be fine? Takes longer but still fine?

Can you add garlic to this
yes
180 is Fahrenheit or Celsius?
Come on man 😂
😀
What's the shelf life
Week in room temperature, two months in a fridge. Some comment said
It does look pretty putting fresh herbs in there but it can be harmful when (like here) not done properly!
Good video. However, you don't mention precisely how long to infuse at 180 F.
4:20
do you lose nutritional value if you heat olive oil and use it again?
That heartbreaking moment you use all your Rosemary in the hot oil because you didn’t know you needed a fresh sprig for the bottle 🫣 oh well hopefully it’ll still turn out good lol great video thank you for sure sharing
How long can you keep the rosemary oil?
Thanks Joe, I'm gonna do this today, yay!
180 of what? F or C . I see it is not boiling then it must be 180 F and yet, would be great if you are clear with that point :)
My thoughts exactly... I guess it’s F... otherwise we would fry the rosemary
180*C is 350*F
Funnel with a strainer❤️✨ life
Botulism?
Yak yak yak yak,no good grief man!
😍😘
