If you want to make real buttermilk, get cream and put in a high speed wisk for around 10 mins. The butter will stick together and leave the buttermilk behind. Both the butter and the buttermilk are so nice when made at home. Not knocking the video, it's a quick way to make it and it works, u can also remove the curds with sieve or cheese cloth to leave it silky.
Please make as many teaching videos as you possibly can. I promise to like and share. Your straight to the point videos are what most of us have been searching for. I really need a quick and simple pie dough recipe. Thank you so much.

Real buttermilk is basically a thin yogurt. It tastes almost exactly like Kefir and has live bacteria cultures (though different ones than Kefir). I used to hate the taste until I started drinking Kefir. lol. I would suggest lemon juice for the substitute if possible because buttermilk has a light lemony quality.

For a mater chef, this is not buttermilk this is curdled milk at best almost cottage cheese or with two or three days left out it would be fermented milk when you add yogurt to the whole milk (before refrigeration this was how milk was drunk; which is great to drink by the way I call it liquid cheese)! To make buttermilk, you take milk with all its cream in the milk all its fat aka whole milk, and you make butter and when you remover the butter what you have left behind is BUTTERMILK which has most of the fat remover, and the buttermilk is almost opaque some people clam it to be sweet or sweeter than whole milk, but it is without curdles in it little to no fat left behind; Buttermilk is closer to 2% milk than what you see here! If you leave the fat behind in the whole milk it is still whole milk, but you now have curdled milk which is great to eat or drink, but it is not buttermilk if you want buttermilk and cannot make buttermilk buy 2% milk because it has less fat than whole milk or make butter This master chef is wrong, but don't take my word for it Google how to make butter than come back and tell me I am wrong!
Milk -> heat -> add starter curd in mild hot condition or buttermilk or lemon juice Set for 8+ hours -> churn the thick curd with the wood churner for 20 minutes or less, add water 1:3 or 1:4 100ml curd:300ml water, step by step add 100ml water curn for 2 minutes then add water curn, then add water churn each time 100ml water. -> finally the butter will separate from the curd, remove the butter, the rest is buttermilk.😊 Add some ginger, cumin + Coriander leaves + Mint + black pepper. Enjoy refreshing energetic buttermilk 😊😊😊 No chilli or onion or tomato or potato it will make poison or crazy.
This recipe, in fact, almost none of the recipes I saw mention that this WILL NOT WORK if your milk is cold! Let your milk sit out or microwave it until it's room temperature. One cup was perfect for me after 30 seconds in the microwave. It felt hot on top, but once I stirred it, the temperature was just right. I added vinegar and immediately saw it start to curdle! Hope this helps someone!

Spoiler Alert: adding vinegar or lemon juice to whole milk, is called clabbered milk. Everything is just wrong, when using this clabbered milk instead of real buttermilk. The pancakes have a significantly lower reaction (not as tender and fluffy) with baking soda in pancakes, also there is an off flavor; instead of the richness and buttery notes, you get an off flavor, vinegar taste. Do yourself a huge justice and get yourself a pint, quart, or whatever size, cultured buttermilk, of best quality you can purchase from your area. If you are wise, you'll never need buy buttermilk again. See about.
Here in UK I can't seem to be able to buy it whatsoever lol Btw what acidity of the white vinegar has been used? I'm assuming if you used 3% one, then I will need to use half as much if I have 6% one.
If I only need half a cup its ok to just used ½ a cup of milk and ½ a tablespoon of lemon juice/ vinegar right??? Because I know that sometimes when you change the ratios it messes up

I didnt realize that the milk was supposed to be at room temp before you added the vinegar. So I added vinegar to cold milk from the fridge and wondered why it wasnt curdling lol but i figured it out!

At times I have noticed that 1 tablespoon doesn't do the trick, so I end up using more. Why does that happen? For one cup of milk I sometimes have to use 2 tablespoons of vinegar or lemon juice. BTW, the link for printable recipe is returning an error - page not found error.
Some milk vendors tend to add sodium bicarbonate (basic salt) in the milk to prevent it from getting spoilt. Hence some portion of the acid that you add in the milk gets used up to neutralise the sodium bicarbonate and only a part of the acid works on the actual process.
So… I only have lemon so I’m going to do lemon juice and what kind of lemon juice lemon juice that you could drink from or the sour kind of lemon juice ?
