Lots of side effects. You have changed my life with your videos, I love you , Ying and Micah. Please keep doing what you’re doing which is making people feel happy about food. I have also have the most tender roasted lamb ever in Andalucia Spain at the restaurant La Sarten in Behnavis. It is quite touristic today but a few decades ago it was rather tourist free. The Spaniards are awesome in this field.
Wow!!! Just wonderful. Mannix an elegant white table cloth resteraunt Love the leg of lamb, sweet breads and livers. But you'll fit in cause of the family's hospitality. Love the little houses with balconies Really quaint and quiet.. Such a little town with the biggest heart. I saw Jeffrey and Keith today. That Joserito ham looked so good. An appetizer with bread, crackers, maybe soup with beans! Sounds like another good tour in Spain!!!
If I've learned anything from these videos from Spain, it's that both lamb and suckling pig can be utterly transformed by the simplest of ingredients. Just salt basically. And, roasting in an oven with fire. This...and, that the rendered juices are an essential part of the eating experience.
not a lamb leg as he states, it was a lamb fore quarter or shoulder including shank and neck, but i would be very happy to eat the slow cooked lamb, it looks amazing
Lechazo is a lamb that has only had milk, weighing approximately 4 kilos. It is a different breed than the Australian lamb. The Australian sheep is Merina (very good wool) the Churra for meat is better.

He visitado 30 países, algunos varias veces y tengo suficiente información para esa opinión. De hecho Mark fue a Barcelona hace 4-5 años y los restaurantes a los que fue no le dejaron impresionado como esta vez.
Sin desmerecer en absoluto el jamón embasado, y mucho menos si es jamón de máxima calidad como son los jamones Joselito, pero ése jamón cortado en el momento de comerlo es otra dimensión.
Yo suelo decir de los mejores por prudencia, pero cuánta razón tienes... Lo variada que es la geografía, clima y gastronomía en España con lo relativamente pequeña que es geográficamente... Incomparable.

También conozco bien los 3 que mencionas y cada uno tiene su encanto, sus partes buenas y menos buenas. Yo personalmente me quedo con España aunque hay aspectos específicos en los que me gustan más UK o USA.

The secret is not really the food, it is eating communally. For a Spaniard, the important thing is not whether it is a lamb or some potatoes, the important thing is that meal with family and friends. The smell, the taste is something that makes you remember those people, those moments, even if years go by, it is something that makes you remember those moments, it is something magical. I see that you give a lot of importance to the food that has it, but the important thing is that social experience, a smell, a bite and it makes you relive that evening with those loved ones. it's Magic, there are no other words to describe it. Then there is that these foods are so special you want the best for your loved ones, your friends, your acquaintances, your family and that is why everything is so natural with few sauces and spices and everything with first class products.

I really like the idea of caul fats sticking on carcass during the dry aging period, reminds me a dish called sheftali kebab which belongs to Cypriot cuisine, simply pork patty rolled around caul fat and cooked over coals can do lamb version too, and kidneys.... yes finally some offals, my personal and strong idea is offals are more valuable than the meat itself because all of them a pack of flavor and characteristic textures, also requires huge cooking knowledge, kidney fats are very unique staff, it will be the best flavor for grill meats especially over coals kebab sort of cooking, loved it !

Years ago, lamb was looked down upon as a lesser meat but I love a good roast lamb. This had me drooling Mark! If I ever hit Spain I would actually detour to visit this restaurant

Surreal that after all the hype they give you vacuum sealed, machine cut ham! It's preferable to have a lesser ham fresh cut by knife than the best jamón vacuum sealed and machine cut... Always great to see how you enjoy Spanish food so thorough and honestly :-)
