      I made it is my $39 Martha Stewart Dutch oven. I bet it tastes every bit as good as your $275 pot. Prove me wrong

    It's been awhile but THANK YOU FOR THE CAULIFLOWER MASH. They way you did it is good, but over the last few years I've found that actually making half actual mashed potatoes and half cauliflower mash is the BEST combo. The cauliflower by itself loses most of the heat extremely quickly. Adding half potato/ half cauliflower it retains the heat way better. Also tastes better imo. But it's a GREAT combination. Screw normal mashed potatoes forever.
    EDIT: Also if you do it this way, just add the cauliflower on top of the potatoes and use a normal potato masher. No need to dirty up and have to clean the food processor.

    Short ribs are surprisingly good despite them being a cheaper cut. I use them to give great flavor to a beef stew

    Sam, I made your shortrib recipe with the Guinness - brilliant! I tossed in about 180g of leftover lubye bzeit and it worked a charm. I might add in a few cannellini beans next time. Cheers! 🍷

    Hey Sam, just some info to maybe save you time with your cauliflower.
    Cut the head in half without removing the green leafs from the bottom.
    Take your knife and cut close to the heads around the main stem.
    Everything else will fall off and you're left with just the florets.
    Love the show, keep up the good work!

    I puréed some carrot with onion and celery added bigger carrots 1.5 hours in I added butter once veggies were sautéed 3.5 hours 350 Wow, add some Bass or Harps to the left over Guinness You get to enjoy the Guinness twice

    I love that he uses Lucerne Cream.
    That's the same brand milk I buy on sale at safeway in northern California
    The fact that he uses real ingredients and not super expensive either.
    I picked up three short ribs st rayleys yesterday on sale for a steal of $7 so I swooped them.
    Grabbed a couple chuck eyes that were on sale for $5 each that ik going to do philly cheesesteaks with.

    We call the mix of celery, carrots and onions 'mirepoix'. We pronounced mir-pwa. It's a french word but we can call it like this everywhere in the Western world.

    Making this tonight, but had to replay part of it over and over where he says “just 3 more things...” cuz I kept catching 2... then realized the 3rd was the thyme that he totally spaced on. 🤣. Got that figured out, put it all together and got it in the oven, started walking away and went F#@!... turned around and went back to put the damn thyme in the pot. 🤷‍♂️

    Ultimately my fault though pretty obvious to use beef.
    Haven't tried it yet. Still braising. Smells okay but it definitely doesn't smell beefy enough. Might drop a bullion cube and call it good enough :)

    I made this yesterday Sam, two things:
    1. It BADLY needed salt
    2. There was a one inch layer of fat on top of the Dutch oven
    Did you salt and did not include in the video? Likewise, didn’t you need to skim some fat?

      Hassina Ahmadzada I read somewhere In the comments that they simply used beef broth and I tried this recipe but for my taste it was meh..it was good but it still had the Guinness sharp flavor and while I know it’s meant to do that it just was too strong for me so I’ll be trying this recipe again but without it next time
