Deep Dish Omelette or Quiche - High Protein Version

  • Deep Dish Omelette baked in the woods using a titanium pot
    Ingredients
    2 Eggs
    ¼ Tomato Diced
    1 8” Low Carb Wrap
    2 Sausages (Pre-Cooked, Chopped)
    2 Strips of Bacon (Pre-Cooked, Chopped)
    ½ Green Onion Chopped
    ½ tsp Garlic Powder
    ½ tsp Black Pepper
    1 Tbsp Italian Seasoning
    1/2 cup Shredded Cheese
    Instructions:
    Pre-cook bacon and sausage, then chop into small bites size pieces.
    Use a dish that’s small in diameter then your wrap. Place parchment paper in dish then add wrap. Make sure your wrap is like a bowl to hold your ingredients.
    Add 4 eggs and mix to break yolks. Add seasoning to eggs and mix to spread seasoning throughout the mixture.
    Add meat, onion and press into the eggs. Add diced tomato's to the top of the omelette.
    Top with shredded cheese if you like your cheese as a brown crust, then you can add extra cheese when there is only 5mins left to cooking to get a nice, melted look. If you don’t like the browned cheese crust then hold the cheese until the last 5mins of cooking, then add the cheese.
    If using Air Fryer bake on 390F for 20-30mins. Check every 10mins to see if the egg is fully cooked. If using oven cook on 350F for 35-40mins, again keep checking every 10mins to see if egg is fully cooked.
    When fully cooked let cool for 5-10mins, then cut and serve. Enjoy!

    So I tried this today ... a smaller version just to test.
    My omelet consisted of a single egg, 1-1.5 tbl ground beef prepared for tacos, a finely diced greeen onion and a slice of colby-jack cheese. And a low-carb tortilla.
    My "oven" was the Firebox Box Pot with the cooking stone. My stove was the Bushcraft-Essentials Bushbox Outdoor Pocket Stove. Fuel was one Esbit tablet, placed inside an aluminum cup from a tea candle, in order to reduce the surface area and extend the burn time. Rather than parchment paper, I used a "Giant" paper muffin cup that I first flattened. This test was conducted indoors without any wind.
    The omelet ingredients were assembled in a stainless steel bowl I picked up at the thrift store, 3.75 inches in diameter and with a total volume of 1.25 cups. It was placed in the Box Pot on a metal ring about .25 inches tall cut from a tomato-paste can to prevent burning on the bottom. This gave me about .25 inches of clearance between the bowl and the sides of the Box Pot to allow the heat to circulate.
    The Esbit tablet burned 17 minutes. During the burn, the exterior temperature of the sides of the Box Pot reached 400F degrees near the bottom and 200+F near the top. Ten minutes after the last flame went out, the side of the Box Post still registered temperatures approaching 200F, due to the large amount of heat absorbed by the cooking stone and its slow release. That stored heat was used to complete the cooking. Thirty minutes after the last flame, the omelet was 100F when it was removed.
    The omelet tasted great. It was still a bit soft and creamy, which I liked, but the tortilla did not crisp up. Given the smaller bowl, the tortilla may have added too much mass, especially since I was trying to pull it off with a single Esbit tablet.
    I made a second omelet with a few more ingredients and omitted the tortilla, cooking the mixture in a "Giant" paper muffin cup placed in the small stainless steel bowl. It was another winner and, as expected, more fully cooked. I also did not need to depend on the stored heat from the cooking stone to complete the cooking.
    This would be a great Keto or high-protein trail meal if it could be shown to work with dry ingredients, e.g. freeze-dried eggs, bacon bits, dehydrated veggies, hard cheese, etc.

    Your quiche looks great. I like to add a little gruyere to mine and a little more on top. With my camp dutch oven I put 20 briquets on top and 10 under. Most often I make a frittata or crustless quiche.

    Good thing I had something to eat before watching this, Mark, because you’re killing me…….😬🤤 The tortilla definitely can be used for differing recipes that require a crust. As I was watching, I was thinking about the possibility of using a combination Trangia with a simmer ring and a few coals if you only have a small wood stove. ✌️🇺🇸🇨🇦✌️
