    hey al, I've had a kamado for a few years and been getting pretty good at steaks, but last time i tried a duck i failed miserably. This saturday was my second try, so i watched both of your duck videos and followed the poking + brining + orange glaze and it turned out amazing; every one at the dinner party could not have enough. Just wanted to drop this to say thanks for the content.

    I used to be Keto and gave up.
    January I weighed 486lb and decided to try Carnivore diet. I am down 42lb already and your videos encouraged me to document my journey as well as do some bbq videos as well.

    Roasted duck is delicious. I usually get roasted duck at a local Vietnamese restaurant. I've been wanting to roast my own duck, however ducks are very expensive at my local grocery store. Your duck came out very good when you cooked it on your rotisserie kit in the Kamado Joe.🤙🏽

      Thanks Greg. I’m REALLY surprised at how big the difference is. I’m not even using the ThermoWorks Signals and Billows to maintain temp because the Big Joe is so stable.

    Think the brisket loss to @smokingDadBbq really lit a fire in you. Love the content. Thought you had a 18 inch Kamado Joe classic 2. That looks like a 24 inch. Am I mistaken?

      Hi Andrea! You're really going to love doing this! Get yourself a cheap loaf pan to put in the bottom of your KJ to capture the fat and cook the veggies - they are as good as the duck meat! Hi to Sam and the girls!!!!

    Thanks for sharing this. I tried to cook a duck on my Kamado last year and the skin just came out too soft and chewy. I didn't have the JoeTisserie at the time though. This cook will be my chance at redemption (hopefully).

      Do it! The direct heat and the higher heat make a big difference.

      Vegans are even tasty sous vide - just make sure you get a good maillard crust on them!

      True - but in these quantities as a glaze the carb count is low enough that it fits on any keto program except pure carnivore.

    I love duck and yours looks fantastic, but really brussels sprouts are not on a carnivore diet, maybe Keto, but not carnivore.
