  • Today we are doing a bbq smoked and reverse sear of a prime rib (standing rib roast) on the Weber Summit charcoal grill and I'm also showing you some of my favorite bbq accessories and gadgets for some gift ideas.
    Some (not all) of these were sent to me to try, but nobody paid me or required me to use these in a video. I have nothing to gain financially for recommending them. I'm not even using Amazon affiliate links.

    Jason, thanks for the video. I love doing prime rib cooks. Something to consider: carve away the bones. It gives you more surface area to place rub on the roast for that magical crust that is the best part. While cooking gently rest the bones on the roast or put them somewhere else.

    I used Montreal Seasoning forever. Then I found the incredibly versatile seasoning from my favorite Steak House, St. Elmo, located in Indianapolis. I’ve found the really big containers of St. Elmo Seasoning at my local Sam’s Club. If you cannot locate it, it can be ordered online. It is by far the best seasoning for beef that I have ever used. I hope you give it a whirl. You won’t turn back...lol!

    This is a great video. It proves how well Christmas and BBQ go together. I have never done a Prime rib. This video challenges me to do so on my BGE. Love this.

    excellent job as usual. I started using Grill Grates a couple years ago and have converted my Gas grill, my camp Jumbo Joe & my larger Kettle charcoal grill to use only the Grill Grates on all. The consistency in heating (and yes these get crazy hot) is perfect, they do help to spread out hot spots per say and flare ups forget it, such a great job managing flare ups. Prime Rib is my favourite to do on the grill.

    You can get that the pink rock salt at the dollar store. I watched your video last week on the prime rib steaks. So I wanted to try this so I went and bought five steaks and I did everything you said and oh my God they were so good. I just wanted to thank you for that video it was the first time I ever cook prime rib on the BBQ and this year I seem to be getting into a lot more barbecuing I just wanted to thank you for all your tips I'm addicted😎

    Thumbs up for the lump wood charcoal. None of those briquette monstrosities. I've never had problems lighting lump charcoal. That's what starter chimneys and a piece of paper with a little bit of cooking oil on it lit underneath it is for.

    I found out that by grinding down the Montreal seasoning, the flavor profile got better. I did it on my mortar and pestle

    I will keep you close to me on Christmas Day! Tried to follow a prime rib recipe last year not knowing that my oven will vent and not keep heated while off. lol Prime Rib was super rare and had to be cooked a little longer! Going to try the grill this year!

      The internal meat thermometer is really the key to bbq. Even if you just pick up a cheap one somewhere, it will really help lock down that variable. It's hard to mess up anything if you don't under or overcook it. Hope this helps. Thanks for watching, Adia.

      Yeah, it's pricy but it's a great all around cooker. Most of the benefits of ceramics without the weight and fragility. I love it.

      This recipe did not disappoint! The only weird part was that the center of the meat cooked perfectly but the edges were still pink in some places...seemed backwards. I don't have a channel...yet!

    Fantastic as always, throughly entertaining. The Grill Grate is definitely on my 'wish list', I like the fact one can turn Grate upside down. I see a lot of potential here, Weber Roitisere direct coal with 'no flare' Grill Grate holes on top, underneath say Rotisserie Chicken for The Perfect Chicken.       Turned out way better than i thought it would. I used that 50 mm canon lens. You should get it for t5. It's cheap, lets lots of light in and does great portraits for thumb nails if you want to blur the background. Also, works well at night too. The only down side is it's 50mm with means I had to move the camera back a few feet, but other than that i like it.

    You had me at "today we are going to use montreal seasoning" I love that stuff on steaks and im sure it will go great with this ribeye roast. Great tips here. I just picked up one from Aldi for 6.99 a pound!

      Yep! Maybe in the spirit of your video I will post a (short) one of the outcome. Its 16 degrees here in Ohio right now and I cant wait to go out and fire up the Weber! Sorry to hear about your asparagus being over done. I usually put those guys on last because they do cook quick and I like them a little firm! I have an "impatient dinner table" so right when I take the meat off to rest 10 min or so I throw the asparagus on.
      P.S. Thanks for the link to the Drip ’N Griddle Pan! Its a little pricey at $70 right now but I have been looking for something like this for shrimp or smaller items that I would like a "grill" flavor but dont want it to fall between the grates! Great Xmas gift idea there!

    Another great video, the prime rib looked fabulous . Outback Steakhouse, I was a kitchen manger for them 20 years ago. I use their potato recipe all the time. Happy Thanksgiving to you and your family.

    Man that looks good. Im going to do one this week. I was thinking internal cook at 225-250f until internal temp is 125, rest for 20 mins then sear.

      Yep. That sounds like a good plan. Let me know how it comes out. Make sure you start off with the best meat you can get your hands on. That makes a huge difference on these roasts.

    I will say that the flat side of those grill grates is the best char you can put on a steak from my opinion. I've done steak, shrimp and scallops and lots of other things and its killer for getting the job done right.
    I would very strongly suggest using a weight to help transfer that heat over.
    The only thing better than these I'd say is a direct flame that wraps around the food but these do add a lot more control.

    Great Vid! I'm cooking the same thing tomorrow for Thanksgiving on my weber one touch 22. How would you suggest I do the reverse sear without plate?

      Do it the exact same way I did except use your own drip pan and leave the lid off and get the coals flaming hot before you sear. Just know there will be flair ups so keep an eye on things and slide it over if it gets out of the control.
      The company that makes that drip pan in this video also makes a product called a "Slow 'N Sear" which is great for reverse searing. I do video work for them so I've been using it a lot and I really like it. You might take a look.

    You did this one before I began my channel. I've watched it before but for some reason didn't leave a comment. Maybe was on the big screen. Anyhow, I liked how you did this cook. I'll be trying this again sometime over the holidays and will use this method. It looked delicious. If you have anything to add since this cook, feel free to tell me. I happen to have some grill grates now too. Took long enough. lol I think asparagus is grown for abusing on the grill. I've done my share of that.
