Nice result there! I found one similar in the UK and it turns out it is Norwegian Larvikite, also with Mica Biotite I think (not 100% sure). Yours is a bit different but I would guess it is in the Feldspar family.
Basically an undercut is a dent or gouge on the surface of the finished stone. A lot of stones, like this one here, are made up of different types of minerals, and each one has a different hardness. So when you grind away at the stone the softer materials get cut away faster than the harder stuff. That causes the surface to have little dents in it...those are the undercuts. Sometimes you can have three or more different hardness's of materials and it makes you want to pull your hair out because you keep polishing the thing and wonder why it still looks like a satin finish so you look at the thing under magnification and the stone looks like a mutated golf ball with four different depths of dents in it. GAWD! So with that long winded explanation, an undercut is a dent in the stone caused by different material grinding away faster because of its hardness.
